Single Bevel vs Double Bevel: the Fundamental Divide in Japanese Knives
Every Japanese kitchen knife belongs to one of two families. Double bevel (ryoba, 両刃) blades are sharpened on both faces and cut straight. Single bevel (kataba, 片刃) blades are sharpened on one face only and cut with surgical precision, at the cost of a learning curve. This page explains both geometries, the knives built on each, and how to pick your side.
Almost everyone should buy double bevel. Single bevel is a specialist tool that rewards specialist skills.
Double bevel knives (gyuto, santoku, bunka, sujihiki) are versatile, ambidextrous-friendly, and easy to sharpen. Single bevel knives (yanagiba, deba, usuba) cut cleaner and more precisely for specific tasks like sashimi and decorative vegetable work, but demand technique, task-specific use, and traditional sharpening skills. If you are not sure which you need, you need double bevel.
What a bevel actually is
The bevel is the ground surface that narrows a blade's thick body down to its cutting edge. Look at any kitchen knife from the tip, straight down the spine, and you see a cross-section: a wedge of steel that tapers until the two faces meet at an apex. The bevel is that taper, and the way it is arranged on the blade defines the knife's entire character.
There are exactly two arrangements:
- Double bevel (ryoba, 両刃, "both edges"). Both faces of the blade are ground toward the centerline. The cross-section is a V. The apex sits in the middle of the steel, and the knife tends to travel straight down through food.
- Single bevel (kataba, 片刃, "one edge"). Only the front face is ground. The back face stays flat, usually with a shallow hollow. The cross-section looks like a right triangle, and the apex sits at the very edge of the back face.
Everything else on this page follows from that one geometric choice: how the knife tracks through food, which hand can use it, how it is sharpened, where in Japan it tends to be made, and what it costs.
Double bevel 両刃: the geometry almost everyone uses
A double bevel edge is ground from both sides, typically at 12 to 15 degrees per side on a Japanese knife, versus roughly 20 degrees per side on a classic German chef's knife. Because the apex sits in the center of the blade, forces on the two faces balance out and the knife cuts straight down. It works identically in the right or left hand, forgives imperfect technique, and can be sharpened by anyone who can hold a consistent angle.
Every Western-style Japanese knife is double bevel. That includes the knives most cooks actually own:
- Gyuto (牛刀), the Japanese chef's knife and the default all-rounder.
- Santoku (三徳), the shorter, flatter home-kitchen generalist.
- Bunka (文化), the santoku's angular k-tip sibling.
- Sujihiki (筋引), the long double bevel slicer, effectively the ambidextrous answer to the yanagiba.
- Nakiri (菜切) and petty knives, the vegetable rectangle and the small utility blade.
Symmetric vs asymmetric: the 70/30 detail
"Double bevel" does not always mean perfectly symmetric. Many Japanese makers ship double bevel knives with a deliberately uneven grind, commonly described as 70/30 or 60/40: the front face carries a wider bevel than the back. The knife is still ryoba, still usable by most cooks, but the geometry borrows a little single bevel behavior: slightly better food release on the wide side and a slightly cleaner entry into dense food. Ratios like 70/30 are conventions rather than measured values, and the practical difference from a 50/50 grind is small. The one real consequence: a strongly asymmetric grind is handed. A 70/30 knife ground for right-handers can steer subtly in a left hand, which is worth checking before you buy if you are a lefty.
Symmetric 50/50 grinds remain the norm for most production knives, including both Okami knives, because they behave identically in either hand and are the easiest to maintain.
Single bevel 片刃: anatomy of a specialist edge
A single bevel blade is ground on the front face only. That face carries three named landmarks, and the flat back adds two more. Learn these five terms and every single bevel conversation becomes readable:

The hollow back is the clever part. A truly flat back would be slow to sharpen (the whole surface would need to contact the stone) and sticky in food. The urasuki solves both: the back touches the stone only along the thin uraoshi rim, so a few light strokes true the entire back side, and food contacts less steel as the cut opens.
Single bevel blades are also, traditionally, laminated: a hard carbon steel edge layer (hagane) forge-welded to a soft iron body (jigane). The soft iron absorbs shock and makes the wide kireha faster to grind, while the hard steel holds the acute edge. This construction, called kasumi when the two layers show as a misty contrast, is the standard Sakai approach.
Why single bevel enables extreme precision
Three properties fall out of the one-sided geometry:
- A more acute effective edge. All of the taper happens on one face, so the total included angle at the apex can be lower than a double bevel of equal durability. The edge enters food with less wedging and less crushing.
- A flat reference plane. The back of the blade is effectively a straightedge. Slide it along the face of a cut and the knife tracks that plane exactly, which is what lets a chef take translucent, even slices.
- Predictable steering. A single bevel knife does not cut dead straight; the beveled face pushes the blade toward the flat side. Untrained, that is a flaw. Trained, it is a feature: the chef aims the flat back along the intended cut line and the geometry holds the line for them.
Two benchmark tasks show what this buys:
Sashimi. A yanagiba draws through a fish block in one long pull stroke. The acute single bevel edge severs cells cleanly instead of tearing them, which preserves the surface sheen and, many chefs insist, the texture of the fish on the tongue. The urasuki releases each slice without sticking.
Katsuramuki (桂剥き). The rotary peel: turning a cylinder of daikon against an usuba to produce a continuous paper-thin sheet. The flat back rides the daikon as a reference surface while the thin single bevel edge planes off an even layer. It is the classic training exercise of Japanese knife work, and it is essentially impossible to do well with a thick double bevel blade.
Single bevel knives are handed, and left costs more
Because the grind is one-sided, every single bevel knife is built for a specific hand. The standard production knife is right-handed: bevel on the right face, flat back on the left. Held in a left hand, that same knife steers the wrong way, the geometry works against every cut, and the techniques the knife exists for stop working. A left-handed cook cannot simply adapt to a right-handed yanagiba the way they can to a symmetric gyuto.
Left-handed single bevel knives are mirror-image builds: bevel on the left, urasuki on the right. They are real and available, but expect two things:
- A surcharge, commonly in the 30 to 50 percent range over the identical right-handed model, and sometimes more from small workshops.
- Lead time. Many left-handed models are forged or finished to order rather than stocked.
The premium is not gouging. A mirrored knife cannot reuse the standard forging, grinding, and handle-fitting steps; the smith and sharpener effectively run a separate low-volume production line for a blade that may sit in inventory far longer than its right-handed twin. Low volume plus reworked process equals higher cost.
For most left-handed cooks, the practical answer is a symmetric double bevel knife: a 50/50 gyuto or a sujihiki behaves identically in either hand. Go left-handed single bevel only when the task genuinely demands kataba geometry.
The single bevel family: yanagiba, deba, usuba, kiritsuke
Traditional Japanese cuisine assigns one specialist blade per task, and the classic trio plus the executive's knife covers nearly all of it:

A note on the kiritsuke, because the name is genuinely confusing: the traditional kiritsuke is single bevel. The widely sold "kiritsuke gyuto" or "k-tip gyuto" is a double bevel gyuto wearing the kiritsuke's angular tip. Same silhouette, completely different geometry. If a listing does not say kataba or single bevel, assume it is the double bevel version.

The regional map: Sakai single bevel, Seki double bevel
The bevel divide is also a geography lesson. Japan's two most famous knife cities specialized on opposite sides of it.
Sakai, south of Osaka, is the single bevel capital. Its forges grew up supplying the professional kitchens of Osaka's restaurant culture, and its defining products are hand-forged kataba knives: yanagiba, deba, and usuba made under a strict division of labor in which independent forgers (kaji) and sharpeners (togi) each spend a career on one stage of the blade. Sakai's output is small-batch and craftsman-driven, and it is widely described as the dominant source of the traditional knives used in Japan's professional kitchens.
Seki, in Gifu Prefecture, is the double bevel industrial powerhouse. Once a sword town, it converted to modern production cutlery and now builds the stainless, Western-style double bevel knives that dominate world exports: the gyutos, santokus, and petty knives of the big production brands. Precision machinery, laminated stainless blanks, and consistent factory edges are the Seki signature.
The mapping is a strong tendency, not a law. Sakai workshops also make excellent double bevel knives, and Seki factories list single bevel models. But if you pick up a hand-forged yanagiba, the odds are good it came from Sakai, and if you pick up a VG-10 Damascus gyuto, the odds are good it came from Seki. The two cities are, in effect, the two halves of this article expressed as places.
Sharpening: two different disciplines
Double bevel: the familiar routine

Single bevel: a different technique entirely
A single bevel knife is not sharpened at an angle you choose; the blade itself is the angle guide. The process has two distinct halves:
- The front (kireha). The entire ground bevel is laid flat on the stone, from shinogi line to edge, and the whole surface is honed as one plane. The steel dictates the angle. The skill is pressure control: keep the shinogi line straight and the bevel flat, because every wobble is recorded visibly in the finish. The effective edge angle that results is acute, often described as roughly 10 to 15 degrees.
- The back (uraoshi, 裏押し). The blade is laid completely flat on its back, and a few light edge-trailing strokes deburr the edge along the uraoshi rim. Never lift the spine to create an angle on the back, and never grind the back heavily: the urasuki hollow is a finite resource, and aggressive back-sharpening slowly erases it. The rim should stay narrow, on the order of a couple of millimeters.
Practical consequences: single bevel sharpening takes longer to learn, punishes mistakes visibly, and is one reason these knives stay in professional and enthusiast hands. It is also, once learned, deeply satisfying, and because the wide bevel self-registers on the stone, a practiced hand can produce an edge of remarkable keenness with great repeatability.
Which should you choose?
Choose double bevel if you cook Western or mixed cuisine, want one knife for many tasks, are left-handed and budget-conscious, or have not sharpened on stones before. This is the honest recommendation for the overwhelming majority of home cooks, and it is why both Okami knives, the Classic and the Premium Damascus, are symmetric double bevel gyuto-pattern blades.
Choose single bevel if a specific craft is calling: you break down whole fish (deba), slice sashimi regularly (yanagiba), want to master traditional vegetable work (usuba), or you cook Japanese cuisine seriously and are ready to learn traditional sharpening. Buy the knife for the task, buy it for your hand, and budget for stones at the same time.
They are not rungs on one ladder. A single bevel knife is not a gyuto upgrade; it is a different instrument. Most serious Japanese kitchens hold both, and use each where its geometry wins.
Myths and misconceptions
"Single bevel knives are simply sharper"
Sharpness is a property of the apex, and a well-sharpened double bevel gyuto is extremely sharp by any test. What single bevel offers is a more acute geometry and a flat reference plane for specific cutting strokes. For push-cutting an onion, a good gyuto gives up nothing. For pull-slicing sashimi, the yanagiba's geometry genuinely cuts cleaner.
"Real Japanese knives are single bevel"
Both are real and both are Japanese. Kataba is the older culinary tradition, but Japan has been building world-class double bevel knives for over a century, and they are what most Japanese home cooks use daily.
"A 70/30 grind is a single bevel"
No. An asymmetric double bevel still has two ground faces and a centered-ish apex. A true kataba has one ground face, a flat back, and an urasuki hollow. The maintenance and technique are entirely different.
"Left-handers just flip the knife over"
The grind cannot be flipped; the steering and the reference plane go the wrong way. Left-handed cooks need a mirrored left-handed model or a symmetric double bevel knife.
"The hollow back is a manufacturing shortcut"
The urasuki is deliberate, skilled work. It makes the back trueable in seconds, reduces friction, and is one of the defining refinements of Japanese kataba construction.
