The quick answer

SG2 holds an edge roughly twice as long. VG-10 is cheaper, tougher for its price, and easier to sharpen. Neither is "better" until you say what you want.

SG2 (also sold as R2) is a powder-metallurgy stainless that runs 62-64 HRC and keeps a working edge for months longer than conventional steels. VG-10 runs 60-62 HRC, sharpens faster on ordinary waterstones, forgives more mistakes, and starts at well under half the price. If you sharpen your own knives and want maximum time between sessions, buy SG2. If this is your first serious Japanese knife, or you want the best performance per dollar, buy VG-10 and never look back.

01 · The contenders

What each steel actually is

VG-10: the cobalt stainless workhorse

VG-10 is a high-carbon, high-chromium stainless steel developed by Takefu Special Steel Co., Ltd. (武生特殊鋼材) of Echizen City, Fukui Prefecture. The exact development date is debated; Takefu's own materials point to the company's early decades, and the steel rose to worldwide prominence in the 1990s, when Seki's production houses adopted it at scale. Its signature is a 1.3-1.7% cobalt addition, which lets the steel harden to 60+ HRC without turning glass-brittle. VG-10 is what Tojiro, hundreds of Seki brands, and (in derivative form) Shun build on. It is the definition of mid-premium: hard enough for a fine, lasting edge, genuinely stainless, and friendly on ordinary waterstones. Our full reference is at VG-10.

SG2 / R2: the powder-metallurgy step up

SG2, marked SPG2 by Takefu itself and sold as R2 by makers like Takamura and Ryusen, is Takefu's powder-metallurgy stainless. Instead of casting the steel conventionally, the molten alloy is atomized into fine powder and re-consolidated under heat and pressure, which produces extremely fine, evenly distributed carbides. The powder itself is widely reported to be produced within the Kobe Steel group and finished and distributed by Takefu, which is where the R2 designation comes from. The result is a steel that hardens to 62-64 HRC, carries far more vanadium and molybdenum than VG-10, and holds a keen edge dramatically longer. Our full reference is at SG2 / R2.

One point worth underlining before the tables: these are siblings, not strangers. The same mill that made VG-10 the mid-premium standard built SG2 to define the tier above it. Comparing them is really asking a single question: is the tier above worth the money and the sharpening effort to you?

Two numbers in that table decide almost everything downstream. First, vanadium: SG2 carries roughly ten times VG-10's vanadium, and vanadium carbides are harder than the iron carbides that do most of the cutting work in conventional steels. Second, the production method: powder metallurgy spreads those hard carbides evenly instead of letting them clump, so the edge wears uniformly and can be ground to a finer apex without chipping out at the carbide boundaries.

Everything you will feel in the kitchen, the longer edge life, the slower sharpening, the crisper apex, traces back to those two facts.

03 · Hardness

Hardness: 62-64 vs 60-62 HRC

Typical production SG2 runs 62-64 HRC: Miyabi and Yaxell state around 63, and Takamura's R2 lines are retailer-listed at 62-64. Typical production VG-10 runs 60-62 HRC, with most quality knives landing at 60-61.

Two or three Rockwell points sounds small. It is not. Hardness is what lets a maker grind a thinner edge that stays thin, and it is the precondition for edge retention. It is also the source of every SG2 caveat on this page: harder steel resists the stone the same way it resists the cutting board.

One honest qualifier that both of our steel references hammer on: heat treatment matters more than the name on the box. SG2 underhardened by a careless factory delivers VG-10 edge retention at powder-steel prices. A disciplined maker's VG-10 at 61 HRC will outcut a sloppy maker's SG2 every day of the week. The steel sets the ceiling; the furnace decides the result. This is why the brands in section 08 all state their hardness openly, and why a powder-steel listing with no HRC number is information in itself.

04 · Edge retention

Edge retention: SG2 wins, clearly

No hedging on this one: SG2 holds an edge roughly twice as long as VG-10 in comparable use. This is the property the entire SG2 price premium is built on, and it is real.

In practical terms, from our steel references: a well-treated VG-10 edge holds its paper-cut standard for roughly 3-6 months of daily home use with regular honing before it wants a real stone session. An SG2 edge in the same conditions holds working sharpness for roughly 6-12 months. High-volume cooks compress both numbers, but the ratio holds.

On our 10-point steel ratings, SG2 scores 9/10 for edge retention against VG-10's 7/10. Among production stainless steels, only exotic grades like ZDP-189 clearly exceed SG2 here. VG-10 is not weak in this company, it is clearly above entry stainless like AUS-8, but it is a tier below, and you will notice the difference by month three.

If you cook five or more times a week and hate the feeling of a fading edge, this section alone may settle the question for you.

05 · Toughness

Toughness and chipping: VG-10 forgives more

The bill for SG2's hardness comes due here. On our ratings, VG-10 takes toughness 6/10 against SG2's 5/10, and in practice the gap feels a little wider than one point because SG2 knives tend to be ground thinner behind the edge, which compounds the risk.

Neither steel tolerates abuse. Both will chip against bones, frozen food, or a glass board, and both will lose a tip to a twisting cut. That caveat applies to every 60+ HRC steel. But at 62-64 HRC with the acute angles makers favor, SG2 is measurably more chip-prone at the edge: microchips from board contact happen sooner, and a moment of bad technique costs you more. VG-10 at 60-61 HRC rolls or dulls in situations where SG2 chips, and a rolled edge is a two-minute hone rather than a stone session.

Concretely, VG-10 is the more forgiving steel if any of these describe your kitchen: other people sometimes use your knives, you occasionally work through dense squash or hard cheese without thinking about it, or your knife skills are still solidifying. SG2 rewards clean, board-conscious technique and quietly punishes everything else. On a wooden board with normal push cuts, both live long, chip-free lives.

06 · Sharpening

Sharpening: VG-10 is the easier steel to live with

This is the trade nobody puts on the product page. SG2 is harder to sharpen than VG-10, not impossibly so, but noticeably, every single session.

VG-10 is moderately friendly on ordinary waterstones. It grabs a 1000-grit synthetic stone, builds a detectable burr in a dozen strokes, and comes back to a keen edge in a normal session. A basic 1000/6000 combination stone handles it comfortably. On our ratings it scores 7/10 for ease of sharpening.

SG2 scores 5/10, and the reasons are the same vanadium carbides that make it hold an edge. Those carbides resist most abrasives, so the steel cuts slowly on soft entry-level soaking stones, the burr forms late and small (plan on two or three times the strokes you would give VG-10), and deburring takes patience. It rewards harder-wearing abrasives: hard ceramic stones like Shapton Glass or Naniwa Chosera, or diamond plates. It sharpens beautifully in the end, the fine powder grain takes a crisper apex than VG-10 can, but it makes you earn it.

The honest framing: SG2 asks for better equipment and more patience per session, then hands you far fewer sessions per year. VG-10 asks for almost nothing and sees you at the stones twice as often. Which of those is the better deal depends entirely on whether you enjoy sharpening. Our whetstone guide covers technique for both.

07 · Corrosion and price

Rust resistance and the price reality

Corrosion: both genuinely stainless

Not much drama here. SG2 carries 14-16% chromium, VG-10 carries 14.5-15.5%, and both rate 8/10 for corrosion resistance in our steel references. Neither patinas, neither needs the anxious wipe-downs carbon steels demand: wash, dry, done. If we must split the hair, VG-10's lower carbon content makes it marginally more carefree in sloppy conditions, salt-heavy prep, a blade left wet longer than it should be. In a normal kitchen you will never see either steel rust.

Price: the gap is real and it starts at the bottom

The shape of the table is the point. A legitimate VG-10 knife starts around $70-$100 because Tojiro exists. Meaningful SG2 choices start around $180, most established SG2 lines cluster in the $250-$400 band, and the showpieces run past $450. You can pay a VG-10 price and get real VG-10; there is no equivalent shortcut into SG2. Whether SG2's performance gap justifies a 2-3x price gap is exactly the question the verdict section answers, because it depends on who is holding the knife.

08 · Cladding

A note on Damascus and cladding

Shopping either steel, you will mostly meet it dressed up. Both SG2 and VG-10 almost always arrive as a hard core clad in softer stainless: sometimes plain (Tojiro DP, Takamura's migaki finish), often as layered Damascus (Shun Classic, Miyabi Birchwood, Yaxell's 101 and 161-layer flagships), sometimes hammered tsuchime.

Be clear-eyed about what the cladding does. The soft outer layers protect the hard core and make the blade easier to manufacture and repair; the pattern itself is cosmetic. A 101-layer Damascus SG2 blade and a plain-clad SG2 blade cut identically if the core steel and grind match. Only the core touches your food. Pay for the pattern if you love it, that is a perfectly good reason, but pay for it knowingly. The verdict, by who you are

Neither answer is a compromise; they are two tiers of the same mill's catalog, each excellent at its own job.

Which brands run which steel

All of these are makers and lines we have researched and profiled ourselves; each link goes to our own guide.

VG-10 (and its close derivative)

  • Tojiro DP: the benchmark value line. A genuine VG-10 core at around 60 HRC, clad in 13-chrome stainless, at the lowest legitimate price in the category. The 210mm F-808 gyuto is probably the most recommended first serious Japanese knife in the world.
  • Shun, with an honest asterisk: current Shun Classic and Premier run VG-MAX, a proprietary Takefu derivative developed on top of the VG-10 formula with small composition tweaks. Earlier Classics used VG-10 itself, and in hand the two are near-identical. Same family, house recipe.
  • Miyabi, past tense worth knowing: the original Kaizen line used VG10, while today's entry lines (Koh, Evolution, Kaizen II) run FC61, a fine-carbide stainless in the same workhorse role. We flag it because "Miyabi entry = VG-10" is common shorthand online and is no longer accurate.

SG2 / R2

  • Miyabi: the Birchwood is the most recognizable SG2 knife in the West, with Artisan and Mizu running the same roughly 63 HRC core at friendlier prices.
  • Enso: the SG2 and Hachi lines, made by Yaxell in Seki, are among the most affordable routes into genuine SG2.
  • Takamura: the Echizen workshop that helped pioneer R2 in kitchen knives; its laser-thin R2 gyutos are the enthusiast reference for what this steel can do.
  • Yaxell Gou and Super Gou: the same SG2 core at roughly 63 HRC under the deepest production Damascus in the business, 101 and 161 layers respectively.

Is SG2 better than VG10?

For edge retention, yes: SG2 runs 62-64 HRC against VG-10's 60-62, and its dense vanadium and molybdenum carbides wear far slower, so the edge lasts roughly twice as long in comparable use. The trade is that SG2 costs more, sharpens slower, and is slightly less forgiving of abuse. Better depends on whether you value the longer edge or the easier maintenance.

Is SG2 harder to sharpen than VG-10?

Yes, noticeably. SG2's vanadium carbides resist most abrasives, so it cuts slowly on soft entry-level waterstones and its burr forms late and small. It rewards hard ceramic stones or diamond plates.
