Pick up a yanagiba. Look at it from the spine down toward the edge. One side of the blade is flat, the other is ground to a long, shallow angle. Now pick up a gyuto. Same exercise. Both sides angle in to the edge symmetrically. That is the difference between single-bevel and double-bevel construction, and it is the most consequential geometric choice in Japanese knifemaking.
Most buyer guides skim past it. They mention that yanagiba and deba are single-bevel, gyuto and santoku are double-bevel, and move on. But the bevel geometry dictates how the knife cuts, how it steers, how you sharpen it, and whether you are going to enjoy owning it. If you are about to buy a Japanese knife, this is the geometry conversation that should happen before the steel conversation.
What a bevel actually is
Every cutting edge in the world is two surfaces meeting at a line. Those two surfaces are bevels. The angle they meet at is the included angle of the edge. If both surfaces are ground at the same angle from the spine, the knife is double-bevel (also called V-edge). If only one side is ground and the other side is left flat, it is single-bevel. That is the whole structural difference.
The consequences are everything else.
Why a single-bevel slices differently
A single-bevel knife has an asymmetric cross-section. Push it through a piece of fish and the bevel side wedges material away from the cut, while the flat side leaves a clean wall. This is the entire reason yanagiba exist. When you slice sashimi, you want a polished, single-stroke cut where the protein structure is not bruised. A symmetric blade pushes equally to both sides and creates micro-tears on each face. A single-bevel pushes only on one side, and if you angle it correctly, the cut face on the served side of the fish is glassy.
The same logic applies to yanagiba slicing for nigiri, deba breakdown of whole fish, and usuba katsuramuki of vegetables. Single-bevel geometry creates clean separation between the cut surface and the discarded surface. It is a craftsman tool, not a generalist tool.
Why a double-bevel works better for almost everything else
A double-bevel knife steers straight through hard material. Onion, carrot, squash, chicken thigh: anything where you are pushing through resistance rather than gliding past it, a symmetric edge is what you want. The forces balance, the blade tracks predictably, and you do not have to compensate for a sideways pull.
This is why the gyuto, santoku, bunka, and nakiri are all double-bevel. They are general-purpose knives meant for chopping, dicing, slicing produce, breaking down poultry, and the long list of everyday kitchen tasks. A symmetric edge is the right geometry for unsymmetric food.
The sharpening tax
This is where the romantic appeal of single-bevel knives meets reality. A single-bevel knife is much harder to sharpen correctly than a double-bevel.
On a double-bevel, you pick an angle (usually 12 to 17 degrees per side), put the bevel flat against the stone, and grind. Both sides. Done. The geometry is forgiving because small errors on one side are mirrored on the other.
On a single-bevel, you have to maintain a precise flat plane on the bevel side, plus a perfectly flat back side (the ura), plus a tiny ura-oshi micro-bevel on the back. Any wobble in your bevel-side angle changes the geometry of the knife. The flat back has a slight concavity (the urasuki) that has to be preserved. If you flatten it accidentally during sharpening, you have to send the knife to a togishi for restoration. None of this is impossible, but it is a skill that takes years to develop. Most home cooks who buy a single-bevel never learn to sharpen it correctly, and the knife slowly drifts toward dull regardless of how often they hone it.
The lefty problem
Almost all single-bevel knives are made for right-handed users. The bevel is on the right side of the blade as you hold it. If you are left-handed and want a yanagiba, you have to special-order a left-handed version, which costs more and has longer lead times. Some smiths will not make them at all. Double-bevel knives have no handedness, and this is one of the quiet reasons most pro chefs in mixed kitchens default to double-bevel for the line and reserve single-bevel for personal cutting.
Where single-bevel actually earns its place
If any of the following is true, a single-bevel knife is worth the sharpening tax:
- You serve raw fish regularly and care about the cut face.
- You break down whole fish at home and want a deba that handles bone the way the format intends.
- You practice katsuramuki and want a usuba for traditional vegetable work.
- You already own a sharpening setup and have spent a year getting good with double-bevel work.
If none of those apply, a single-bevel knife is going to spend most of its life unused in a drawer because it does not do the things you actually cut, and it is going to dull faster than you can correctly sharpen it.
What about kiritsuke and yo-deba?
The lines blur in two formats worth knowing. Kiritsuke is traditionally a single-bevel knife in formal Japanese cuisine, but most modern kiritsuke sold in the West are double-bevel kiritsuke-gyuto hybrids: the angled tip of a kiritsuke with the symmetric grind of a gyuto. These are excellent generalist knives. Just be aware that what you are buying is, structurally, a fancy gyuto.
Yo-deba is the Western adaptation of the deba: a heavier double-bevel knife meant for breaking down poultry and small fish. It is a useful format if you do a lot of bone-in protein work and do not want to maintain a true single-bevel deba. Most American home cooks should buy a yo-deba over a deba.
The traditional logic, briefly
Single-bevel knives are not a Japanese invention so much as a Japanese refinement. The geometry comes out of the same metallurgical lineage that produced the katana, where asymmetric grinding allowed for a thinner, harder edge backed by a softer body. Sakai workshops formalized the kitchen application starting in the Edo period, when the deba and yanagiba evolved as the specialist kitchen knives of the kaiseki tradition.
Double-bevel knives in Japan are a more recent development, mostly post-Meiji, when Western kitchen techniques started influencing Japanese cuisine. The gyuto (literally "cow knife," meaning beef knife) came directly from the French chef knife template, ground in Japanese steels with Japanese geometry. The santoku evolved later as a Japanese answer to the Western chef knife in a smaller package.
What I would actually buy
Coming to Japanese knives for the first time? Buy a double-bevel gyuto in 210mm. That is the answer for at least 90 percent of home cooks. It will do everything you need it to do, you can sharpen it on basic equipment, and it does not punish you for being human about angle control.
If you have been cooking with double-bevel for a couple of years and want to add a specialist tool, a yanagiba is the most rewarding single-bevel to learn on, especially if you are buying or breaking down fish at home. Skip the deba unless you are processing whole fish weekly. Skip the usuba unless you are practicing traditional Japanese vegetable cutting.
Asymmetric grinds: the middle ground
Worth a section because most buyers do not know this exists. Some Japanese makers grind their double-bevel knives asymmetrically: not pure 50/50 left/right, but more like 70/30 or 60/40. The blade is technically still double-bevel (both sides have a ground bevel), but one side is meaningfully wider than the other.
The reasoning is to capture some of the slicing benefit of single-bevel geometry while keeping the workhorse versatility of double-bevel. A 70/30 gyuto cuts cleaner on the dominant side, slices food away cleanly on protein work, but still tracks straight on hard vegetables and does not require single-bevel sharpening discipline. The major drawback is handedness: a 70/30 gyuto ground for right-hand use feels off in a left-hand grip, even though it is technically double-bevel.
If you see a Japanese knife labeled as having a "75/25 grind" or "60/40 asymmetric bevel," this is what is happening. It is a sophisticated middle ground that most production knives do not offer. Higher-end hand-forged knives sometimes do.
Sharpening considerations summary
If you remember nothing else from this article, remember this much. A double-bevel knife can be maintained with a 1000-grit stone and 20 minutes of practice. A single-bevel knife requires a 1000-grit stone, a 3000-grit stone, a 6000-grit stone, an understanding of the urasuki, and roughly 20 hours of practice over the first year before you can sharpen it correctly. The first set of equipment costs $50; the second costs $150 plus a year of patience.
This is why the recommendation to home cooks is overwhelmingly to start with double-bevel. The single-bevel knives are beautiful, traditional, and capable of cuts the double-bevel cannot match. They are also a real commitment, and the people who own them happily are usually the people who knew that going in.
The geometry is the tool. Pick the geometry that matches your kitchen, not the geometry that looks coolest on Instagram.
