What each steel actually is

Ginsan: the stainless branch of the paper-steel family

Ginsan (銀三, "Silver Three") is the everyday name for Silver Paper No. 3 (銀紙三号, Gin3), a fine-grained cutlery stainless from the Yasugi works in Shimane Prefecture, produced under Hitachi Metals for most of its life and under Proterial since the company's 2023 renaming; the YSS (Yasugi Specialty Steel) branding continues. It belongs to the same colored-paper family as Shirogami and Aogami: white paper for the pure carbon grades, blue for the tungsten-alloyed grades, silver for the stainless branch. Gin3 is the grade the mill itself describes as stainless steel with hardness and sharpness comparable to carbon steel, aimed squarely at kitchen knives. Roughly 1% carbon, 13-14.5% chromium, and deliberately nothing else. Our full reference is at Ginsan.

VG-10: the cobalt stainless that conquered the factories

VG-10 is the flagship of the V Gold series from Takefu Special Steel Co., Ltd. (武生特殊鋼材) of Echizen City, Fukui Prefecture, a small specialty mill founded in 1954 inside one of Japan's oldest blade regions. The exact development date is debated; Takefu's own materials point to the company's early decades, and the steel rose to worldwide prominence in the 1990s when Seki's production houses adopted it at scale. Its signature is a cobalt addition, which lets the steel harden to 60+ HRC without turning brittle, backed by molybdenum and vanadium for wear resistance. It is what Tojiro, hundreds of Seki brands, and (in derivative form) Shun build on. Our full reference is at VG-10.

The framing that makes this whole comparison click: these two steels answer the same customer request ("a serious stainless kitchen knife") from two different worlds. Ginsan is the answer a traditional forging town gave; VG-10 is the answer a modern production supply chain gave. Everything below follows from that split.

Read the table by what is missing. Ginsan is almost austere: essentially a white carbon steel with enough chromium to cross the roughly 13% stainless threshold and nothing that fights the whetstone. VG-10 chases edge retention the modern way, with molybdenum and vanadium carbides plus cobalt strengthening the matrix. Both approaches work. They just produce steels with completely different personalities at the stone, which is the real subject of this page.

One note for the ingredient-conscious: Ginsan's lack of cobalt is not just a sharpening story. Some buyers simply prefer a knife steel without cobalt in it, and Ginsan is the mainstream Japanese stainless that delivers serious performance without any. We state that as a preference some buyers hold, not a safety claim; cobalt bound in a finished blade is not something our sources treat as a kitchen hazard.

03 · Two traditions

Why forges chose Ginsan and factories chose VG-10

The Sakai problem Ginsan solved

When professional Japanese kitchens began demanding stainless single-bevel knives (health codes, humid prep rooms, staff who could not be trusted to oil a yanagiba every night), the traditional forging towns needed a stainless they could actually work by hand and sharpen to single-bevel standards. Most high-alloy stainless steels tolerate neither. Ginsan does: its relatively simple chemistry survives traditional forge work, takes the acute, glassy apex single-bevel knives demand, and gives the carbon-like feedback Sakai's sharpeners built their craft on. Gin3 was the answer, and Sakai became its spiritual home. Some workshops even push it into honyaki constructions, a stainless steel responding to swordsmith-style differential hardening, which almost no other stainless permits.

The Seki problem VG-10 solved

Production factories have the opposite constraints: they need a steel that hardens predictably in batch heat treatment, tolerates automated grinding, and ships consistent knives by the tens of thousands. VG-10's cobalt-backed chemistry is exactly that steel, and Takefu made it easy to adopt at scale: the mill supplies pre-laminated billets, VG-10 cores already clad in stainless or patterned suminagashi layers, so a workshop can offer Damascus lines without running its own forge-welding. That clad-blank supply chain is a big reason so many mid-premium Damascus knives from different brands feel closely related. Seki's houses adopted it at scale in the 1990s and never looked back.

Neither choice is a compromise. They are two supply chains each picking the steel that suits how they actually make knives, which is why the maker lists in section 07 sort so cleanly.

04 · Hardness and edge

Hardness and edge character: a tie with a texture difference

On paper this is the closest match in our steel library: both steels typically ship at 60-62 HRC, with quality knives clustering at 60-61 in VG-10 and 60-62 in Ginsan (the Gin3 mill spec calls for 59 HRC or above after hardening). Nobody buys one over the other for hardness.

The edges feel different anyway. Ginsan's fine, uniform grain and low carbide volume let the apex come to an acute, glassy finish close to White #2 territory, which is precisely why single-bevel makers trust it. VG-10 takes a very good, keen edge and polishes beautifully, but its molybdenum and vanadium carbides show up as a slightly coarser apex under magnification and a marginally less fine edge in hand. In double-bevel kitchen work the difference is subtle; in single-bevel work it is one of the reasons Ginsan owns that category.

You will hear the enthusiast cliche that Ginsan is "White steel that forgot to rust." Treat it as reported sentiment rather than metallurgy: adding 13%+ chromium genuinely changes carbide structure, hardenability, and quench behavior, so the two steels are not literal siblings. But as a description of the user experience, the sharpening feel and the fineness of the edge, the analogy is directionally fair, and it is exactly the experience Ginsan buyers are paying for.

The usual hedge applies with extra force here: Ginsan responds so strongly to heat treatment quality that the maker's name carries more weight than with factory steels. A Ginsan blade from a serious Sakai workshop and a bargain blank stamped from the same alloy are not the same product. VG-10 is more tolerant of industrial processing, which is part of why factories like it, but the same rule holds in softer form: two VG-10 knives at the same price can behave like different materials.

05 · Retention and sharpening

Edge retention vs sharpening feel: the real trade

Retention: VG-10, by a modest margin

No hedging: VG-10 holds a working edge somewhat longer than Ginsan in like-for-like use. Its molybdenum and vanadium carbides out-wear Ginsan's simple chromium carbide structure; our Ginsan reference rates the steel's retention good to very good, comparable to other roughly 1% carbon stainless steels, slightly behind VG-10 and clearly behind powder steels like SG2. In a normal home kitchen, a well-treated VG-10 edge holds its paper-cut standard for roughly 3-6 months of daily use with regular honing; expect a Ginsan edge to want a touch-up somewhat sooner under the same conditions.

Sharpening: Ginsan, decisively

This is Ginsan's signature trait, and the gap is bigger than the retention gap. With no hard alloy carbides to grind through, Ginsan gives way to a waterstone the way White #2 does: the burr rises in a handful of strokes, stays small, and strips off cleanly, with the slightly tacky, connected feedback carbon-steel users describe. It is the best-sharpening mainstream stainless in Japanese cutlery and arguably the best stainless to learn sharpening on. VG-10 is moderately friendly, grabbing a 1000-grit stone and building a detectable burr within a dozen strokes, but its burr is slightly tenacious, it likes to flip from side to side rather than shear off, and the whole session simply takes longer and tells you less.

Put the two halves together and the trade becomes clear, and honest people can take either side. VG-10 asks less often; Ginsan asks less per visit. Many Ginsan owners find the net maintenance effort lower, because each touch-up takes a fraction of the time and no special stones: ordinary synthetics do everything, diamond plates are unnecessary. If you sharpen reluctantly, VG-10's longer intervals win. If you sharpen happily, Ginsan turns maintenance into the best part of ownership. Our whetstone guide covers technique for both.

Corrosion and toughness: near-washes

Both are genuinely stainless in kitchen conditions: wash, dry, done. VG-10's extra chromium plus molybdenum gives it a marginal edge in sloppy conditions (salt-heavy prep, a blade left wet too long), so Ginsan rates very good to VG-10's slightly better, and neither patinas in normal use. Toughness is adequate and similar in both at this hardness class: fine for boards and produce, wrong for bones, frozen food, glass boards, and twisting cuts, like every 60+ HRC Japanese steel. Thin single-bevel Ginsan edges demand technique, but that is the geometry talking, not the alloy.

The shape of the table tells the supply-chain story again. VG-10 has a genuine budget floor because factory scale exists: the Tojiro DP starts around $70-$130 and is often the cheapest legitimate VG-10 clad knife in any market. Ginsan has no equivalent floor, because almost every serious Ginsan knife carries Sakai (or Toyama, or Echizen) workshop labor in the price; the realistic entry sits around $90 and the center of gravity runs $150-$400, overlapping VG-10's mid-premium band. You are not paying more for the steel; you are paying for the hands. Whether those hands are worth it is exactly what the verdict section sorts out.

  • Shun, with the honest asterisk: current Shun Classic and Premier run VG-MAX, the proprietary Takefu derivative developed on the VG-10 formula. Earlier Classics used VG-10 itself, and in hand the two are near-identical. Same family, house recipe.
  • Sakai Takayuki again: the 33-layer hammered Damascus line that introduced many Western cooks to Sakai runs a VG-10 core at around 60 HRC.

Sakai Takayuki appearing on both lists is not sloppiness; it is the whole comparison in one catalog. The same Sakai house sells VG-10 Damascus to the gift-and-first-knife market and Ginsan wa-bocho to the traditional and professional market, because it understands exactly which buyer each steel serves. Even Hado and Kagekiyo keep VG10 lines alongside their Ginsan work for the lower-maintenance kitchens. The steels coexist comfortably; they just answer different priorities.
