ZDP-189, Hitachi's 3% Carbon Experiment
A powder metallurgy stainless steel with roughly triple the carbon of an ordinary blade steel. Legendary edge retention, punishing sharpening sessions, real chip risk, and a supply story that gets murkier every year.
ZDP-189 is what happens when a steelmaker stops asking "what does a kitchen need" and starts asking "how hard can we go."
ZDP-189 is an extreme powder metallurgy stainless steel developed by Hitachi Metals, whose specialty steel business now operates as Proterial. Its composition, approximately 3.0% carbon and 20% chromium, is so far outside normal blade-steel territory that it can only exist as a powder steel; a conventional ingot with these numbers would be unusable. Hardened to 64-67 HRC, it delivers some of the longest-lasting edges ever put on a production knife. In exchange it is slow to sharpen (diamond or CBN abrasives strongly recommended), less tough than mainstream steels, prone to chipping when abused, and increasingly scarce on the market. It is a specialist's steel, made famous in kitchens by Hattori of Seki and in pockets by a handful of high-end folding knives.
An experiment that shipped
Most blade steels are compromises tuned for manufacturability: enough carbon for hardness, enough chromium for stain resistance, enough restraint that mills, grinders, and sharpeners can all cope. ZDP-189 was designed with almost none of that restraint. Introduced by Hitachi Metals in the mid-1990s (1996 is the commonly reported date), it pushed carbon to roughly 3.0%, about triple the level of classic cutlery steels, alongside roughly 20% chromium.
Numbers like that are impossible in a conventionally cast steel. Slow-cooled ingots with this much carbon and chromium would form enormous brittle carbide networks, and the result would snap like ceramic. The way around it is powder metallurgy: the molten alloy is atomized into a fine powder, each droplet solidifying almost instantly, and the powder is then consolidated under heat and pressure. Rapid solidification keeps the carbides small and evenly distributed, so the finished steel carries an enormous volume of hard particles without the fatal coarse networks. The same process underlies SG2 and the other modern powder steels; ZDP-189 simply takes the concept further than nearly any of them.
The payoff is a steel that hardens beyond the reach of almost every competitor. Mill literature describes hardness of 67 HRC and above as achievable; production knives are typically run at 64-67 HRC. For context, most quality Japanese stainless kitchen knives live at 58-62 HRC, and even the hardest traditional carbon steel, Aogami Super, tops out around 66 in knife form.
One naming note: after Hitachi Metals was acquired and renamed in 2023, its Yasugi Speciality Steel (YSS) business, the same lineage that produces the white-paper and blue-paper carbon steels, continues under the Proterial name. ZDP-189 belongs to that family tree, which is why you will see both "Hitachi ZDP-189" and "Proterial ZDP-189" in circulation. They are the same steel.

A caveat worth stating plainly: Proterial publishes the defining 3% carbon, 20% chromium figures, but a complete official datasheet with tight ranges for the minor elements is not published the way it is for the blue-paper steels. The molybdenum, tungsten, and vanadium figures above circulate widely in steel databases and are best treated as reported values rather than mill-certified ones.
The chromium asterisk. On paper, 20% chromium sounds more stain-resistant than most premium stainless steels. In practice, chromium only fights corrosion when it is dissolved in the steel matrix, and in ZDP-189 a substantial portion is tied up in chromium carbides. The result is a steel that is genuinely stainless for kitchen purposes, but closer to the lower edge of the stainless club than the raw number implies. Owners in humid climates occasionally report faint staining on ZDP-189 edges. It is not carbon-steel reactive, just not invincible.

The pattern is the same one that defines every extreme steel: ZDP-189 converts toughness and convenience into edge life. For a careful cook who cuts on wood, never touches bone, and enjoys long intervals between sharpenings, that trade can be wonderful. For a busy, chaotic kitchen, it is exactly backwards.
Why so few makers touch it
ZDP-189 arrives at the knifemaker as consolidated powder-steel stock, usually laminated between softer stainless layers for kitchen use, so nobody is forge-welding it over charcoal. The difficulty moves downstream instead.
- Hardening runs hot and precise. Getting the full 66-67 HRC out of ZDP-189 requires high austenitizing temperatures and tightly controlled cycles. Undershoot and you get a merely hard knife with all of the sharpening pain and none of the edge-life payoff; overshoot and toughness, already the weak point, collapses further.
- Grinding is slow and expensive. At final hardness the steel eats abrasive belts and wheels. Thin kitchen grinds, the whole point of a Japanese blade, take real time and skill, which is part of why ZDP-189 knives were never cheap.
- The geometry has to respect the steel. A maker who grinds ZDP-189 as thin as a soft stainless is manufacturing chip complaints. The good makers leave just enough meat behind the edge, which is a judgment call learned by ruining blades.
This is why ZDP-189 kitchen knives were only ever produced by a short list of workshops, mostly around Seki, where the industrial finishing infrastructure and the metallurgical experience live in the same city.
The Hattori connection
In the kitchen world, one name is attached to ZDP-189 above all others: Hattori. Ichiro Hattori built his Seki workshop's reputation on exactly the kind of metallurgically ambitious, low-volume work that ZDP-189 demands, and his ZDP-189 gyuto and petty knives became reference points for what the steel could do when ground and treated properly. They were never mass products; they were the proof that a production workshop could hit custom-shop standards with the most difficult stainless steel available.
Honesty requires the present tense to be different from the past tense here. Hattori's output has largely wound down: the founder is now in his late eighties, the workshop's official shop has been effectively dormant for several years, and most Hattori knives, ZDP-189 models very much included, now change hands on the collector and secondary market rather than as new stock. Outside the kitchen, ZDP-189 had a celebrated run in high-end folding knives through the 2000s and 2010s, most famously in limited and Japan-made production folders, where its edge retention made it a cult favorite among collectors. Several of those manufacturers have since migrated to other steels as supply tightened, which brings us to the uncomfortable part.
As of mid-2026 we could not verify any official public discontinuation announcement for ZDP-189, and Proterial still lists the grade within its specialty steel lineup. At the same time, the observable market tells a clearer story: Spyderco, the steel's most visible user in folding knives, publicly phased out its ZDP-189 models around 2022-2023 citing supply concerns and replaced them with other steels, reporting that they had been told the steel was being discontinued. New ZDP-189 kitchen knives are increasingly scarce, and no major maker has launched a new ZDP-189 line in years. The fair summary: not formally dead, but fading, with existing stock and secondary-market pieces making up a growing share of what is actually for sale. Treat any specific "discontinued" or "still in production" claim you read elsewhere as unconfirmed either way.

ZDP-189 vs SG2: SG2 (covered on our SG2 / R2 page) is the sensible sibling. It gives up some hardness and outright edge life to ZDP-189, but in exchange it is meaningfully tougher, considerably friendlier on stones, and easy to buy from dozens of active makers. For 90% of cooks eyeing this category, SG2 is the better daily answer, and that is precisely why ZDP-189 became a collector's steel rather than a mainstream one.
ZDP-189 vs Aogami Super: a fascinating contrast, because they reach similar hardness by opposite philosophies. Aogami Super is a traditional forgeable carbon steel with a clean, rewarding sharpening feel and mandatory rust care; ZDP-189 is an industrial powder stainless with almost no rust care and almost no sharpening pleasure. Edge life goes to ZDP-189; edge feel, feedback, and repairability go to the carbon steel.
What maintaining it is actually like
The good news first: because the edge lasts so long, you sharpen rarely. The bad news: when you do, ZDP-189 makes you earn it. Practical rules, with the full technique covered in our whetstone sharpening guide:
- Retire the honing rod. A steel rod does nothing useful to a 66 HRC edge and can microchip it. Ceramic rods are marginally better but still a blunt instrument here. Touch up on a fine stone or a loaded strop instead.
- Use diamond or CBN abrasives. Conventional aluminum-oxide waterstones will cut ZDP-189, slowly, and glaze while doing it. Diamond plates or diamond resin stones turn a frustrating session into a normal one. If you own only traditional stones, expect to spend two to three times longer than on an ordinary stainless.
- Never let it get truly dull. Reprofiling or repairing chips in ZDP-189 on ordinary equipment is miserable. Light, frequent maintenance is the entire game.
- Keep angles conservative. Around 15 degrees per side is a sensible working geometry. Chasing single-digit angles with this carbide volume is asking for a sparkly line of microchips.
- Deburr meticulously. The burr is small and stubborn. Finish with light alternating strokes and a strop; a wire edge left on ZDP-189 will fold and take apex with it.
And the obvious but necessary use rules: wooden or quality plastic boards only, no bones, no frozen food, no twisting cuts, no dishwasher. The steel does not forgive.
Myths worth retiring
"Hardest is best." The myth ZDP-189 exists to test. Hardness buys edge stability and wear resistance, and ZDP-189 delivers both, but every point of HRC is paid for in toughness and sharpening effort. The best steel is the one whose trade-offs match your kitchen, which is why most professionals cook happily at 60-62 HRC and why ZDP-189 remained a niche flagship rather than an industry standard.
"20% chromium means it never stains." Not quite. With so much chromium sequestered in carbides, real-world stain resistance is good but unexceptional. Wipe and dry it like any fine knife.
"ZDP-189 is unsharpenable." No. It is slow on the wrong abrasives and normal on the right ones. Anyone comfortable on waterstones can maintain ZDP-189 with a diamond plate and patience.
"It is officially discontinued." Unverified, as of this writing. The steel still appears in the maker's product lineup, while its most famous users have moved on citing supply. Scarce is documented; dead is not. We will update this page if that changes.

ZDP-189 holds an edge longer and runs harder, but it chips more easily, demands diamond abrasives, and is increasingly scarce. Choose ZDP-189 for the collector appeal and maximum edge life; choose SG2 as the practical high-performance daily driver.
Does ZDP-189 chip easily?
It chips more readily than mainstream kitchen steels. At 64-67 HRC with a very high carbide volume, the steel favors chipping over bending when stressed. On wooden boards with proper technique it holds up well, but bones, frozen food, hard boards, twisting, and drops are all real risks. Conservative edge angles help.
Is ZDP-189 discontinued?
Its status is genuinely murky. We found no official public discontinuation notice, and the grade still appears in Proterial's specialty steel lineup, but its most prominent user in folding knives publicly phased it out around 2022-2023 citing supply concerns, and new ZDP-189 knives have grown scarce. Is ZDP-189 fully stainless?
For practical kitchen purposes, yes: it will not patina or rust the way carbon steel does. But because much of its chromium is locked in carbides rather than dissolved in the matrix, its corrosion resistance is lower than the 20% figure suggests. Rinse and dry it promptly, especially in humid climates.
