Japanese Knife Finishes: What the Surface Tells You About the Blade

Migaki, kyomen, kasumi, kurouchi, nashiji, tsuchime, and Damascus. A finish is not just how a knife looks. It is a readable record of how the blade was built, how it will age, and how much of your money went into the steel that actually cuts.

The short version

A finish is evidence, not decoration

Some finishes reveal construction (kasumi shows a laminated carbon core; kurouchi means the forge scale was left on). Some are textures layered over other finishes (tsuchime and nashiji usually sit above a polish or a lamination). And some, like Damascus, are cosmetic patterning on the soft cladding that does not change how the edge performs. Read every performance claim below with that in mind, and treat contested claims (food release, in particular) as contested.

Framework

How to read a finish

Before we go through the surfaces one by one, it helps to sort them into three honest categories, because they are not the same kind of thing and mixing them up is where most confusion (and most marketing) lives.

Construction finishes. These are the direct result of how the blade was built, and they let you infer what is inside. A kasumi surface, with a cloudy zone above a brighter edge, tells you the blade is laminated: a hard steel core clad in softer iron or steel. Kurouchi tells you the black oxide scale from forging was deliberately left on the upper blade. You cannot fake these without faking the construction underneath them.

Polish levels. Migaki and kyomen describe how far the maker took the polishing. Migaki is a clean satin or brushed polish; kyomen is a mirror. Both are stages on the same spectrum, from rough to reflective, and they can be applied to plain mono-steel or over a laminated blade.

Applied textures. Tsuchime (hammer marks) and nashiji (a pear-skin matte texture) are surface treatments that usually sit on top of something else. A knife can be tsuchime over a kasumi lamination, or nashiji over a stainless-clad core. This is the single most misunderstood point about finishes: a texture name tells you what the surface looks like, not what the blade is made of.

Damascus sits slightly apart. It is a pattern in the cladding, revealed by etching layered steel. The layers are genuinely there in most quality knives, but as we explain below, the pattern itself is cosmetic and does not improve the edge. Polish level

磨き Migaki, the polished satin face

Migaki (磨き) simply means "polished." It is the clean, satin-to-brushed finish you see on a knife whose surface has been ground and polished smooth, usually with a fine directional grain still visible if you catch the light. It is not as reflective as a mirror; it sits one step below that.

What it actually is. A process, not a construction. The maker abrades the blade through progressively finer stones or belts until the surface is uniform and bright. On a laminated blade, a full migaki polish smooths both the core and the cladding to a similar sheen, so the dramatic misty line of kasumi is toned down or removed. On mono-steel, migaki is just a well-finished plain face.

What it signals. Very little about the steel or the lamination on its own, which is the honest point. Migaki is a finishing choice available across mono-steel, san-mai, and stainless-clad blades alike. It signals care in the shop and a preference for a clean, understated look over rustic or decorative surfaces.

Honest performance notes. A smoother surface has slightly less friction against food than a rough one, but the effect is minor and easily overstated. Migaki is chosen for looks and easy cleaning far more than for cutting performance. It shows fingerprints and light scratches more than a matte texture does, because a polished surface reflects them.

Care. Migaki wipes clean easily and resists trapping food. On carbon steel, a bright migaki face is the surface most likely to show patina and discoloration first, because there is nothing to hide it. On stainless it stays bright with minimal effort. Fine scratches from boards and scrubbers are visible over time; a light polish with a fine abrasive can refresh it.

Polish level

鏡面 Kyomen, the mirror finish

Kyomen (鏡面) means "mirror surface." It is the top of the polishing spectrum: a blade taken past migaki to a genuinely reflective, mirror-bright finish.

What it actually is. The same polishing process as migaki, carried much further through very fine abrasives and buffing until the surface reflects like a mirror. It is labor-intensive and unforgiving, because at that level of polish every remaining scratch or wave shows.

What it signals. A high level of hand finishing and often a showpiece intent. Mirror polishing is frequently seen on honyaki blades and on single-bevel knives where the flat, wide face is treated as a canvas. On a honyaki, a mirror or near-mirror polish is also what makes the hamon (the hardening line from differential heat treatment) visible and dramatic.

Honest performance notes. A mirror finish does not cut better than a satin one in any way you would notice in a kitchen. It is chosen for beauty, for showcasing a hamon, and as a demonstration of skill. Claims that a mirror polish meaningfully improves food release run the other way from the textured-finish claims, and neither is strongly supported; treat surface-versus-release marketing skeptically.

Care. A mirror is the hardest finish to keep pristine. It shows every fingerprint, water spot, and scratch, and on carbon steel it will patina and cloud with use. Owners of mirror-polished carbon knives generally accept that the finish will soften over time, or they maintain it deliberately.

Construction finish

Kasumi, the misty lamination

Kasumi (霞) means "mist" or "haze," and it names one of the most information-rich finishes in Japanese knives. On a kasumi blade you see a cloudy, misty grey zone across the upper part of the blade, and a brighter, more polished zone along the edge.

What it actually is. Kasumi is the finish that appears when a laminated blade is polished with natural or synthetic stones that etch the two steels differently. The soft iron or soft-steel cladding takes on a hazy, matte grey, while the harder core steel at the edge polishes brighter. That contrast is not painted on. It is the two materials of the lamination revealing themselves.

What it signals. This is the key point: a genuine kasumi finish implies laminated construction, typically a hard carbon core clad in softer iron (the classic combination behind the finish). When you see a true misty-above, bright-below kasumi face, you are usually looking at a san-mai or two-layer blade with a carbon cutting core. That is why kasumi is so often discussed opposite honyaki (a single differentially hardened steel): they are two different ways of building a blade, and the finish is how you tell them apart at a glance. Disambiguation

Kasumi is also a knife brand. Kasumi is a line made by Sumikama Cutlery in Seki, and its name is a separate thing from the kasumi finish described here. This page is about the finish. If you were looking for the brand, that is the page to read.

Honest performance notes. The kasumi surface itself is a byproduct of finishing a laminated blade; it is not a performance feature you buy on its own. The performance comes from the lamination underneath: a hard core that takes a keen edge, protected and made easier to sharpen by soft cladding. The misty look is the evidence, not the engine.

Care. Because the cladding on a traditional kasumi knife is usually reactive iron and the core is carbon, kasumi blades patina and can rust if neglected. The hazy cladding actually hides light patina and scratches better than a bright polish does, which is part of its practical appeal. Keep it dry, wipe after use, and expect the surface to darken and mellow over time. See our patina guide for what is normal.

Construction finish

黒打ち Kurouchi, the black forge finish

Kurouchi (黒打ち) means "black forged" or "blacksmith finish." It is the dark, matte, slightly rough oxide scale left on the upper part of the blade from forging, with only the edge ground and polished bright.

What it actually is. When steel is heated and hammered in the forge, a black iron-oxide scale forms on its surface. On most finished knives that scale is ground away entirely. On a kurouchi knife, the maker deliberately leaves it on the upper blade and only grinds and polishes the cutting edge, saving finishing labor and giving the blade its rustic, patchy, workmanlike look. What it signals. Kurouchi means the forge scale was left on, which usually signals a traditional, cost-conscious, function-first blade, often a hand-forged carbon-steel workhorse. It is honest about its origins in the most literal way: the surface is the forge, untouched.

Honest performance notes. The scale itself does nothing for cutting. It is on the flats, not the edge. What matters is the steel and the grind underneath. Importantly, kurouchi wears with use, and that is normal, not a defect. The black coating chips and rubs away where the blade contacts boards and hands, and over months a kurouchi knife develops a mottled, personal patchwork. Buyers expecting a coating that stays perfect are misreading what the finish is.

Care. The scale offers some incidental protection to the steel it covers, but the exposed bright edge is bare carbon on most kurouchi knives, so it patinas and can rust and needs drying and wiping like any carbon blade. Do not scrub the black scale hard trying to "clean" it; that just removes it faster. Let it wear naturally.

Applied texture

梨地 Nashiji, the pear-skin texture

Nashiji (梨地) means "pear ground" or "pear skin," named for the fine, dimpled, matte texture of an Asian pear's surface. It is a subtly speckled, low-sheen surface that scatters light rather than reflecting it.

What it actually is. This is where precision matters. Nashiji is a surface texture, and it can arise more than one way. Traditionally it can be the rougher, mottled surface left when forge scale is mostly (but not fully) removed, leaving a pear-skin ground; on many modern stainless-clad knives it is a deliberately applied textured cladding. Either way, nashiji is best understood as a texture that sits over the underlying blade, not as a construction type of its own.

What it signals. A rustic, matte aesthetic and, on modern knives, often a stainless-clad blade finished for looks and low maintenance. It does not by itself tell you the core steel. You have to look at the maker's spec for that.

Honest performance notes. Nashiji is frequently sold with a food-release claim: the theory is that the textured surface reduces suction and lets slices fall away. This claim is contested. The dimples on a nashiji surface are shallow and the effect, if present, is modest and inconsistent compared with a knife's grind and geometry, which do far more for release than any surface texture. We would not choose a knife for food release on the strength of a nashiji finish alone.

Care. The matte, speckled surface hides light scratches and patina well, which is a genuine practical benefit. On carbon versions it will still patina underneath; on stainless-clad versions it stays low-maintenance. Food can lodge in a coarse nashiji texture, so rinse and wipe rather than letting residue dry in it.

Applied texture

槌目 Tsuchime, the hammered texture

Tsuchime (槌目) means "hammer mark." It is the dimpled, faceted texture left by hammering the blade, seen as rows of shallow round or oval indentations across the face.

What it actually is. A texture created by hammer blows, either as a genuine record of hand-forging or, on some knives, as a decorative hammering applied for the look. Like nashiji, tsuchime is a surface treatment that sits over the blade, and it is routinely combined with other finishes: you will see tsuchime over a kasumi lamination, tsuchime over Damascus cladding, or tsuchime on a stainless-clad blade. The hammer marks tell you the surface was hammered, not what steel is underneath.

What it signals. On a genuinely hand-forged blade, tsuchime is a visible signature of the smith's work. On mass-market knives it can be a machine-applied decorative texture. Neither is dishonest as long as no one claims the pattern is doing something it is not.

Honest performance notes. The classic claim is food release: the dimples supposedly trap air pockets so slices do not stick. This claim is contested and, in careful use, the benefit is modest and inconsistent. The dimples are shallow, food is wet and sticky in ways that defeat small air pockets, and the blade's grind and geometry matter far more for release. Enjoy tsuchime for its look and its link to hand-forging, and treat strong release claims with caution.

Care. The textured surface hides scratches and minor patina well. Food can pack into deeper hammer marks, so rinse promptly and wipe dry, especially on carbon or carbon-core blades that will otherwise patina in the dimples.

Pattern in the cladding

墨流し Damascus and Suminagashi, the layered pattern

Damascus, called suminagashi (墨流し) in Japan (the word means "flowing ink," after a traditional marbling method the pattern resembles), is the flowing, layered pattern revealed on the sides of a pattern-welded blade after etching.

What it actually is. Most Japanese Damascus kitchen knives are san-mai laminations where the outer cladding is made of many welded layers of contrasting steel. Etching the finished blade in acid bites into the different layers at different rates, revealing the flowing pattern. The pattern is real (the layers are genuinely there in quality knives); it is the surface expression of a layered cladding.

What it signals. Layered cladding, and a maker (or brand) willing to spend on decorative finishing. What it does not signal is a better edge. This is the single most oversold point in Japanese knives, so we say it plainly: the Damascus pattern is cosmetic and lives on the soft cladding. It does not make the steel cut better, hold an edge longer, or resist rust more. The edge is ground from the single hard core layer underneath, so a plain-clad and a Damascus-clad knife with the same core and heat treatment cut identically. How to spot a fake pattern

Genuine Damascus is layered steel. A faked one is mono-steel with an acid- or laser-etched surface pattern and no layers underneath. The tell: on a real laminated blade the pattern behavior relates to the layers through the cladding, while a printed pattern simply stops at the edge bevel with nothing behind it. Honest performance notes. None from the pattern itself. Any performance comes from the core steel and heat treatment, exactly as on a plain knife. The layered cladding can be slightly softer and easier to sharpen than a hard mono-steel, but that is a property of lamination generally, not of the Damascus pattern.

Care. The etched pattern is on the surface and can fade if scrubbed with abrasives or steel wool; clean gently to preserve it. If the core is carbon, it still needs drying and can patina at the edge; many Damascus knives use a stainless cladding that stays bright. Etched contrast can be refreshed by a maker but is best left alone at home.

Reality check

Combination finishes

Most real knives are not one clean finish. They combine a construction finish or polish level with an applied texture, and sometimes with a pattern. Once you can read the three categories separately, the combinations stop being confusing and start being descriptive. A few common pairings:

  • Kurouchi plus tsuchime. Black forge scale left on the upper blade, with hammer marks showing through it. Very common on rustic hand-forged carbon workhorses; the two together read as maximally traditional and function-first. Anryu's kurouchi-and-hammer knives are a textbook case.
  • Nashiji over a laminated or stainless-clad core. A pear-skin texture applied to the cladding of an otherwise ordinary san-mai or stainless-clad blade, chosen for a matte rustic look and scratch-hiding.
  • Tsuchime over Damascus. Hammered dimples struck into a layered Damascus cladding, so you get both the flowing pattern and the faceted texture. Popular on dressier stainless knives; the two effects are purely visual and stack freely.
  • Tsuchime over kasumi. Hammer marks on a laminated carbon blade whose cladding still reads as a misty kasumi grey between the dimples.

The practical lesson: when a listing says a knife is "tsuchime Damascus" or "kurouchi nashiji," it is naming two or more layers of finish stacked on one blade. Ask what the core steel is and how the blade is built, because the finish names describe the surface, and only the construction underneath tells you how it will cut and last.

Care and aging, by finish

Different finishes hide wear, show patina, and rust at different rates. This table summarizes the practical differences. Reactivity always depends on the underlying steel (carbon versus stainless), so read the "rusts first" column as "if the exposed steel is carbon."

Two rules cover almost everything. First, the finish influences how visible aging is, but the steel decides whether the blade actually rusts, so a carbon blade under any finish still needs wiping and drying. Honesty first, since this page is about reading finishes accurately. Our Classic Chef Knife is a mono-steel AUS-8 gyuto wearing a press-formed tsuchime texture over a blackened, kurouchi-style upper, with a polished edge bevel. In the language of this page: the dimples are tsuchime applied by machine rather than by a smith's hammer, and the dark upper is an applied blackened finish rather than true retained forge scale, which is exactly what you should expect at its price and exactly how we would describe it if we did not make it. The two-tone look behaves the way this page predicts: the black face hides scratches and water spots well, and the polished bevel takes the wear of sharpening invisibly. What is the difference between kasumi and honyaki?

Kasumi is a misty finish that appears on a laminated blade: a hard carbon core clad in softer iron, where the cladding polishes to a haze and the core polishes bright. Honyaki is a single steel forged and clay-hardened into hard and soft zones, usually finished bright enough to show its hamon line. Kasumi implies two steels laminated together; honyaki is one steel treated two ways.

Does a tsuchime hammered finish improve food release?

The claim is common but contested. The idea is that the hammer dimples trap air so slices do not stick. In practice the dimples are shallow and the benefit is modest and inconsistent; a knife's grind and geometry do far more for food release than any surface texture.
