01 · Definition

What AUS-10 actually is

AUS-10 is a high-carbon, high-chromium Japanese stainless steel produced by Aichi Steel Corporation in Tokai, Aichi Prefecture. It’s the highest member of Aichi’s AUS-family of kitchen-knife steels (AUS-6, AUS-8, AUS-10), with the most carbon and the tightest carbide structure of the three.

AUS-10 was developed as a domestic Japanese alternative to Takefu’s VG-series and is used widely by mid-size Japanese knife makers who source from Aichi rather than Takefu. In day-to-day home cooking, most cooks find AUS-10 and VG-10 practically indistinguishable in the first six months of use.

02 · Construction

What the 67-layer Damascus actually does

Before anything else: Damascus in a modern kitchen knife is not the entire blade. It’s the cladding, two stacks of softer stainless steel pattern-welded together and forge-welded onto either side of a hard AUS-10 core. The cutting edge is AUS-10; the visible wavy pattern is the cladding.

This matters because 67-layer Damascus cladding isn’t just decorative. It’s structural:

  • The soft cladding absorbs shock. When the blade hits a hard pit or bone, the softer cladding deforms slightly rather than transmitting the full impact to the brittle hard core, protecting the edge from catastrophic chipping.
  • The cladding protects the core from corrosion. Even though AUS-10 is stainless, the cladding adds a second barrier. Our Premium blades show no rust or pitting even after months of daily use.
  • The Damascus pattern can modestly help food release. The alternating layers create microscopic texture on the blade face, so wet slices cling a little less. The effect is real but modest, smaller than what a hammered tsuchime finish delivers.
  • Each blade is visually unique. The forge-welding process means no two Damascus patterns are exactly alike. A small but meaningful hedonic bonus.

67 layers is a common choice because it sits at a sweet spot: enough layers for a genuinely figured pattern, not so many that production complexity spirals. You’ll see 17-layer, 33-layer, 67-layer, and 101-layer versions across makers; more layers do not mean better cutting, only denser patterning.

The key absence: AUS-10 does not contain cobalt, which is VG-10’s signature addition. Cobalt strengthens the steel matrix and helps VG-10 hold hardness at the top of its 60-62 HRC window; AUS-10 gives that up and typically runs about a point lower, at 60-61 HRC. For a kitchen knife, this is an invisible trade: both are hard enough for any home cooking task; neither should be used against bone, frozen food, or glass.

The honest takeaway: you need to be sharpening fortnightly in a professional kitchen and running controlled edge-retention tests to notice the difference. For a home cook, even a serious one, AUS-10 Damascus and VG-10 Damascus are peers.

05 · Performance

What AUS-10 Damascus is like in the hand

Our own 30-day test on the Okami Premium 8″:

  • Factory edge: passed paper-cut immediately; hair-whittled at 20mm blade depth.
  • Tomato test: 4 seconds for a clean five-slice fan; no crushing at the top of the tomato.
  • Onion test: 30 radial slices on a 100mm onion without edge dulling on the second onion.
  • Chicken breakdown: clean through cartilage; we did not attempt through bone.
  • After 4 weeks of daily home use with ceramic honing: still passed paper cut, though noticeably less glide on tomato skin. Restored to factory sharp in 12 minutes on a 1000/6000 stone.

No chipping. No rust or staining, even without drying immediately after use. The Damascus pattern deepened slightly with patina, a visual sign the cladding is reacting to proteins, but no functional impact.

06 · Care

How to maintain an AUS-10 Damascus edge

  • Hand-wash, always. Dishwasher heat and detergent aren’t friendly to hard steel edges, and they can eat the adhesive in a resin handle over time.
  • Hone before each cooking session. Ceramic rod, not steel. 6-8 light passes per side realigns any rolled edge.
  • Store on a magnetic strip, in a wooden block, or in the provided saya. Never loose in a drawer.
  • Resharpen every 3-6 months at home (1000/6000 stone), or every 1-2 months if cooking daily in volume.
  • Never cut on glass, marble, ceramic, or frozen food. All four will chip a 60 HRC edge. Use wood or HDPE only.

10 · Heat treatment

Why heat treatment matters more than the grade

A steel name on the box tells you the recipe, not the result. The same AUS-10 bar can leave two factories as very different knives depending on how it was hardened. Published guidance for alloys in this class puts austenitizing at roughly 1,000-1,060 degrees C, followed by a fast quench and a low-temperature temper; some makers add a sub-zero step to convert retained austenite. Each variable moves final hardness, and AUS-10 can plausibly be run anywhere from about 58 to 62 HRC.

We spec the Okami Premium at 60-61 HRC. That window keeps our 15-degree-per-side edge stable in real kitchens: hard enough to hold its bite for months of home use, soft enough that a moment of carelessness rolls the edge instead of chipping it. Pushing the same steel to its maximum hardness would look better on a spec sheet and behave worse on a cutting board.

The practical takeaway: a carefully treated AUS-8 or AUS-10 blade will outperform a sloppily treated VG-10 or even SG2 blade. When comparing knives, weigh the maker’s stated HRC and reputation for consistency at least as heavily as the steel name. What the layers are and are not

We said it above and it bears repeating in full: on any modern Damascus kitchen knife, the core cuts and the cladding decorates and protects. Here is the deeper anatomy.

San-mai and the layer-count math

The underlying construction is a laminate, related to traditional san-mai (三枚, “three sheets”): a hard cutting core sandwiched between softer protective outer layers. In a Damascus-clad blade, each outer layer is itself a stack of pattern-welded steel. The Okami Premium’s 67 layers are 33 cladding layers per side plus the AUS-10 core, which is why Damascus counts are almost always odd numbers: 33, 37, 45, 67, 101. More layers mean a finer, denser pattern. They do not mean a sharper knife.

Forge-welded pattern vs. etched pattern

Real Damascus cladding is forge-welded: alternating steels are stacked, heated, and pressure-bonded so the layers run through the full thickness of the cladding. An acid etch afterward only reveals contrast that is already there, and the pattern survives polishing and decades of sharpening. Imitation Damascus is a surface treatment, a laser-etched or acid-stenciled pattern on plain monosteel, and it fades with scrubbing and disappears where the blade is sharpened.

How to tell: look at the spine and the choil. Genuine lamination shows its layer lines on every ground surface, and you can usually see a distinct cladding line where the hard core emerges above the edge bevel. A pattern that stops dead at the blade face is printed, not forged.

What the cladding will never do

It will not make the edge harder, sharper, or longer-lasting. Shock absorption, corrosion buffering, easier thinning on stones (soft cladding grinds faster than hard core), and a blade face no other knife exactly shares: those are the honest benefits. Modern pattern-welded Damascus is also not the wootz crucible steel of historical Damascus blades; that process was lost, and today’s version is a different, well-understood lamination technique. Real, just differently real.

12 · Who uses it

Which brands and makers use AUS-10

We do, and openly. The Okami Premium ($199) is an AUS-10 core in 67-layer Damascus cladding at 60-61 HRC; it is the knife this page exists to explain. Beyond Okami, AUS-10 shows up mainly in value-premium Damascus lines from Seki-affiliated brands and export-focused manufacturers, where it delivers VG-10-class performance without Takefu supply pricing.

Worth stating plainly, because listings often blur it: several Japanese brands you might assume use AUS-10 do not. Tamahagane builds its flagship San series on SG2 powder steel in san-mai construction and its entry Tsubame line on VG-5, no AUS-10 anywhere in the range. Enso runs VG-10 in the HD line and SG2 in its premium tier. Always trust the maker’s own spec sheet over a marketplace listing.

13 · Sharpening

Sharpening AUS-10: the friendly one

AUS-10’s low vanadium content (0.10-0.27%) is the quiet gift here. Vanadium carbides are harder than most sharpening abrasives; with so few of them, AUS-10 abrades fast on any ordinary aluminum-oxide waterstone. No diamond plates required.

  • Stones: a basic 1000/6000 combination stone covers everything. A burr forms within a dozen passes per side at 1000 grit.
  • Angle: match our factory 15 degrees per side. A few degrees of error matters less than consistency.
  • Deburring: the burr releases easily; alternate light edge-leading strokes at 6000 grit, then strop on newspaper or plain leather.
  • Bonus of the cladding: when the blade eventually needs thinning, the soft Damascus jacket grinds away much faster than a monosteel blade would, shortening the ugliest job in knife maintenance.

14 · Myths

AUS-10 and Damascus myths, corrected

  • “Damascus steel cuts better.” The pattern is cladding; the core does the cutting. A plain-clad knife with the same core and heat treatment cuts identically.
  • “More layers means a better knife.” Layer count is aesthetics and marketing granularity. 33 vs 67 vs 101 layers changes the pattern density, not the edge.
  • “Modern Damascus is fake because real Damascus is lost.” Wootz crucible Damascus is indeed lost; pattern-welded lamination is a real, legitimate, centuries-old technique. Different process, honest product, as long as nobody sells it as wootz.
  • “AUS steels are budget junk.” AUS-10 is a specified Aichi Steel alloy sitting a hair below VG-10 on paper. The junk reputation comes from no-name knives with poor heat treatment, not from the steel itself.
  • “Japanese steel means the knife was made in Japan.” Steel origin and forging location are separate facts. Our Premium uses Japanese AUS-10 forged in Yangjiang; we say so on the product page, and any honest brand should do the same.

AUS-10 Damascus FAQ

Is AUS-10 good steel?

Yes. AUS-10 is a high-carbon stainless steel from Aichi Steel in Japan, in the same performance tier as VG-10. Hardened to 60-61 HRC it holds a keen edge for weeks of home use, resists rust well, and sharpens more easily than most steels in its class. For a mid-premium kitchen knife it is an excellent core steel.

Is Damascus steel real?

Modern Damascus is real pattern-welded steel: genuine alternating layers forge-welded together, usually as cladding around a harder core. It is not the legendary wootz Damascus of antiquity, whose exact process was lost. The layers on a quality knife are real metal, but the cutting performance comes from the core steel, not the pattern.

Is AUS-10 better than VG-10?

They are peers. VG-10 adds cobalt and slightly more chromium, which supports marginally better edge retention and stain resistance in controlled comparisons. AUS-10 is a little easier to sharpen and usually costs less. In everyday home cooking most people cannot tell them apart.

Does AUS-10 Damascus rust?

AUS-10 is stainless, with roughly 13-14.5 percent chromium, and the Damascus cladding adds a second stainless barrier. It will not rust in normal kitchen use. Basic care still applies: hand wash, dry after use, and avoid the dishwasher.

What is the difference between AUS-8 and AUS-10?

Carbon, mostly. AUS-8 carries about 0.75 percent carbon and typically runs 58-59 HRC; AUS-10 carries about 1 percent and runs 60-61 HRC. AUS-10 holds an edge noticeably longer, while AUS-8 is slightly tougher and even easier to sharpen. Our Classic ($149.99) uses AUS-8; our Premium ($199) uses AUS-10 with 67-layer Damascus cladding.

How often does an AUS-10 knife need sharpening?

With regular ceramic-rod honing, a home cook typically needs a full whetstone session every 3-6 months. Daily high-volume cooking shortens that to every 1-2 months. AUS-10 responds quickly on ordinary waterstones, so a touch-up rarely takes more than 15 minutes.

Is a 67-layer Damascus pattern real or just etched on?

On the Okami Premium and other quality knives the cladding is genuinely pattern-welded; the acid etch only reveals contrast between real layers. Some cheap knives laser-etch or print a pattern onto plain monosteel, and that pattern fades with scrubbing and sharpening.
