π‘ About Our Knives
What makes Japanese knives different from Western knives?
Japanese knives are crafted with harder steel (typically 58-67 HRC vs 54-58 for Western), allowing a thinner, sharper edge at a more acute angle (15Β° vs 20-25Β°). This means cleaner cuts, less food damage, and lighter weight. The trade-off is that harder steel can be more brittle, so Japanese knives require a bit more care β but the precision they deliver is unmatched. Learn more in our Knowledge Base.
What steel are Okami Blades made from?
Our Classic Chef Knife uses high-carbon 7Cr17MoV stainless steel β a proven Japanese-style steel that balances sharpness, edge retention, and stain resistance. Our Premium Damascus features a VG-10 core clad in 67 layers of Damascus steel, offering exceptional hardness and a stunning wave pattern unique to each blade.
Are your knives handmade?
Our knives are hand-finished by skilled artisans. The blades are precision-forged using modern techniques, then each knife is individually sharpened, polished, and inspected by hand. The Damascus layering process on our Premium line involves repeated folding and hammering that creates the unique pattern β no two blades are exactly alike.
What's the difference between the Classic ($119) and Premium ($199)?
Classic Chef Knife β $119: 7Cr17MoV steel, 58 HRC, pakkawood handle, excellent all-rounder for daily cooking.
Premium Damascus β $199: VG-10 core with 67-layer Damascus, 60+ HRC, premium G10 handle, superior edge retention and a visually stunning blade. The Premium holds its edge approximately 2x longer and offers better corrosion resistance. Not sure which to pick? Try our Knife Finder.
What is Damascus steel?
Damascus steel is made by folding and forge-welding multiple layers of different steel alloys together. Our Premium knife features 67 layers surrounding a hard VG-10 core. This process creates the distinctive wavy pattern on the blade surface and results in a knife that combines the toughness of softer outer layers with the razor-sharp edge of the hard core steel. Each blade's pattern is one-of-a-kind.
Are your knives full tang?
Yes β all Okami Blades are full tang, meaning the steel extends the entire length of the handle. This provides superior balance, strength, and durability compared to partial-tang knives. You can feel the difference in how the knife balances in your hand.
What is the Rockwell hardness of your knives?
Our Classic line is rated at 58 HRC and our Premium Damascus at 60+ HRC. For reference, most Western knives are 54-58 HRC. Higher Rockwell hardness means the blade can take and hold a finer, sharper edge β though it also means you should avoid lateral twisting or cutting through bones.
Where are Okami Blades manufactured?
Our knives are manufactured in Yangjiang, China β one of the world's premier knife-making regions β using Japanese-style techniques and steel. Every blade undergoes strict quality control and is individually inspected before shipping. We work directly with our manufacturing partners to ensure each knife meets our exact specifications.
Do your knives come with a sheath or blade guard?
Yes. Every Okami Blade ships with a protective blade guard (saya-style sheath) for safe storage and transport. Our Premium Damascus also includes an elegant magnetic gift box. We recommend using the guard whenever the knife is stored in a drawer.
π Choosing the Right Knife
Which knife should I buy first?
If you're building your collection, start with an 8-inch chef knife β it handles 90% of kitchen tasks from mincing garlic to slicing meat. Our Classic Chef Knife ($119) is the perfect entry point. If you want the best from the start, the Premium Damascus ($199) is an investment you won't regret. Take our Knife Finder quiz for a personalized recommendation.
Gyuto vs Santoku β which is better for me?
A Gyuto (Japanese chef knife) has a curved belly ideal for rock-chopping and versatile Western-style cutting. A Santoku is flatter and shorter, excelling at the three cuts it's named for: slicing, dicing, and mincing. If you cook a lot of vegetables and use an up-and-down chopping motion, go Santoku. For all-around versatility and protein work, go Gyuto. Our 8" chef knives are Gyuto-style.
What size chef knife should I get?
8 inches is the sweet spot for most home cooks β long enough for efficient cutting but not so large it feels unwieldy. If you have smaller hands or a compact kitchen, consider a 7-inch. Professional chefs often prefer 10-inch blades. Our 8" blades are designed to feel natural for a wide range of hand sizes.
Do I need a knife set?
Most professional chefs say no. A high-quality chef knife handles 80-90% of tasks. Add a paring knife for detail work and a bread knife for crusty loaves, and you have everything you need. We recommend investing in one great knife rather than a set of mediocre ones. Quality over quantity always wins in the kitchen.
Are Japanese knives good for beginners?
Absolutely. In fact, a sharp Japanese knife is safer than a dull Western knife because it requires less force, giving you more control. Our Classic line is specifically designed to be approachable β it's forgiving while still delivering professional-grade performance. Check out our Knife Skills Academy for tips on getting started.
I'm left-handed β will your knives work for me?
Yes. All Okami Blades feature a symmetrical double-bevel edge, meaning they work equally well for right-handed and left-handed users. The handles are also designed with an ambidextrous grip. No special left-handed version needed.
What handle material do you use?
Our Classic line features pakkawood handles β a stabilized hardwood composite that resists moisture and provides a warm, comfortable grip. Our Premium Damascus uses G10 composite, a military-grade fiberglass laminate that is virtually indestructible, impervious to water, and provides excellent grip even when wet.
π§Ή Care & Maintenance
How do I sharpen my Japanese knife?
We recommend using a whetstone (1000/3000 grit combination stone is ideal). Hold the blade at a 15-degree angle and use smooth, consistent strokes. For most home cooks, sharpening every 2-3 months is sufficient. You can also use a ceramic honing rod for touch-ups between sharpenings. Avoid pull-through sharpeners β they remove too much steel and can damage the edge. Visit our Knife Skills Academy for sharpening tutorials.
Can I use a honing steel?
Avoid traditional steel honing rods β they're designed for softer Western knives and can chip harder Japanese steel. Instead, use a ceramic honing rod, which gently realigns the edge without risk of damage. A few light passes before each use will keep your blade performing beautifully between sharpening sessions.
Can I put my knife in the dishwasher?
Never. The dishwasher is the fastest way to ruin a fine knife. The harsh detergents cause corrosion, and rattling against other items chips the edge. Always hand wash with warm water and mild soap, then dry immediately with a soft cloth. It takes 20 seconds and will keep your blade in peak condition for decades.
How do I store my knife?
Best options (in order): magnetic knife strip (wall-mounted), knife block, blade guard in a drawer, or the included sheath. Never toss it loose in a drawer β the edge will dull rapidly and you risk cutting yourself. A magnetic strip is our top recommendation because it keeps the blade accessible, dry, and damage-free.
My knife has rust spots β what do I do?
Don't panic. Minor surface rust can be easily removed with a rust eraser (available at any kitchen supply store) or a paste of baking soda and water applied with a soft cloth. For stubborn spots, use Bar Keeper's Friend. To prevent future rust, always dry your knife immediately after washing and avoid leaving it in the sink. A light coat of food-safe mineral oil on the blade helps in humid environments.
How often should I sharpen?
For typical home use: sharpen on a whetstone every 2-3 months and hone with a ceramic rod weekly (or before each use). If you cook professionally or daily, sharpen monthly. You'll know it's time when the knife struggles to slice a tomato cleanly or when you feel yourself pressing harder than usual. Our Premium Damascus holds its edge roughly twice as long as the Classic.
What cutting board should I use?
Use wood (maple, walnut, teak) or high-quality plastic (HDPE) cutting boards. These materials are gentle on your knife edge. Avoid glass, ceramic, marble, granite, and bamboo β they are all harder than your blade's steel and will dull it rapidly. End-grain wood boards are the gold standard for knife-friendliness.
Can I cut frozen food or bones?
No. Japanese knives are precision instruments designed for cutting food, not chopping through hard materials. Cutting frozen food, bones, coconut shells, or other extremely hard items can chip or crack the blade. Use a heavy Western cleaver or butcher knife for those tasks. Your Okami Blade will thank you.
Can I use my knife on a steel or marble countertop?
Never cut directly on any countertop. Always use a cutting board. Steel, marble, granite, and even tile will instantly dull or chip your blade. Even softer countertops like butcher block should have a dedicated cutting board on top to keep your knife β and your surfaces β in great condition.
