Shirogami vs Aogami
White steel and Blue steel: two carbon-steel families from the same Yasugi furnace, separated by a spoonful of tungsten and a pinch of chromium. Shirogami takes the keenest edge in kitchen cutlery and sharpens faster than anything else; Aogami holds its edge meaningfully longer and forgives the smith a little more. This is the classic carbon question, answered property by property with the numbers from our steel references.
Shirogami takes a marginally keener edge and sharpens fastest. Aogami holds its edge longer. Both rust, both patina, both demand the same care. Neither is "better" until you say what you sharpen for.
Shirogami (white paper steel) is pure iron and carbon with almost nothing else, which is why it grinds away cleanly on a waterstone and takes the cleanest apex steel geometry allows. Aogami (blue paper steel) is the same high-purity base with tungsten and chromium added: the tungsten carbides wear slower, so the edge lives longer between sharpenings, at a small cost in sharpening speed and ultimate keenness. If you love the stones and want the purest feel, buy white. If you cook in volume and want the working edge to last, buy blue. The Sakai single-bevel tradition chose white; most modern enthusiast double-bevel smiths chose blue. Both were right.
What each steel actually is
Shirogami: the pure carbon standard
Shirogami (白紙, "white paper") is the pure high-carbon steel family from the Yasugi works in Shimane Prefecture, produced for most of its life under Hitachi Metals and, since the company's 2023 renaming, under Proterial. The name is literal: the mill wrapped billets of each grade in colored paper so warehouses and wholesalers could tell them apart, and white paper marked the high-purity grade. The steel is iron, carbon, trace silicon and manganese for deoxidation, and almost nothing else, held to brutally tight phosphorus and sulfur caps. That absence of compromise is what gives Shirogami the cleanest sharpening feel in kitchen cutlery, and it is why traditional Sakai smiths trust their reputations to it. Aogami: the alloyed sibling
Aogami (青紙, "blue paper") is the same high-purity base with two deliberate additions: tungsten and chromium. Tungsten forms very hard tungsten carbides that wear far slower than the iron carbides doing the cutting work in white steel, which is the source of Aogami's signature longer edge retention. The small chromium addition slightly improves corrosion behavior (the steel still rusts) and, together with the tungsten, widens the heat-treatment window enough that many smiths can quench Aogami in oil where Shirogami demands the riskier water quench. Hold onto the framing before the tables start: these are siblings, not rivals from different worlds. Same mill, same purity discipline, same tatara-descended lineage. Comparing them is really asking one question: do you want the purest possible sharpening feel, or a working edge that lasts longer between visits to the stones?
What tungsten and chromium actually change
Take the two workhorse grades, White #2 and Blue #2, and the composition difference is almost embarrassingly small. Per the published Yasugi (Hitachi / Proterial YSS) ranges from our steel references:

Everything downstream traces to those two additions. Tungsten carbides are significantly harder than iron carbides, so a Blue edge abrades slower against food and board: that is the longer edge retention, and it is real. The same carbides resist the whetstone, which is why Blue sharpens slightly slower and why its burr hangs on a little more stubbornly. Chromium at half a percent does almost nothing for rust (a stainless steel needs roughly 13%), but it deepens hardenability enough to matter at the quench: Aogami tolerates oil where Shirogami traditionally demands water, and a water quench cracks a meaningful share of blades even in expert hands.
That last point explains a cultural split that confuses newcomers. White steel is not "better" because Sakai masters use it, and Blue is not "better" because it is more alloyed. White survives at the top of the craft because single-bevel work prizes the keenest apex and professionals resharpen constantly. Blue dominates small hammer forges because oil quenching keeps yields high in a three-person workshop. Each steel won the niche its chemistry suits.
Sharpness vs retention: the honest version
Here is the trade with no romance attached. Shirogami takes the keenest edge and sharpens fastest. Aogami holds its edge longer. Both halves are true, and neither is marketing.
On the stones, white steel is the reference experience. With no hard alloy carbides in the matrix, it abrades fast and evenly: a dull edge comes back in minutes, the burr forms quickly, stays small, and releases cleanly, and the steel keeps improving at 8000 grit and beyond. The apex is as clean as steel geometry allows, with no carbides disrupting the line, which is why a freshly sharpened Shirogami blade is measurably sharper than the best stainless at the same grit, and marginally keener than Blue.
Blue gives most of that back. Only Shirogami sharpens more cleanly than Aogami; against any stainless, Blue is still a joy. But the tungsten carbides push back a little on the stone, the burr is slightly more tenacious, and the ultimate apex is a hair behind white. In exchange, the edge survives contact with the cutting board meaningfully longer. Aogami Super, with the most tungsten plus molybdenum and vanadium, stretches that furthest: the benchmark edge retention in traditional carbon steel, at the cost of noticeably more carbide resistance when you do sharpen.
One hedge our steel references hammer on, and it belongs in bold here too: the smith matters more than the label. Paper steels are shallow-hardening, narrow-window steels that effectively grade the maker. A masterfully treated White #2 will outcut a sloppy Aogami Super every day of the week. Buy the forge first, the paper color second.
Toughness: grade matters more than color
This is where the White-vs-Blue framing starts to mislead, because toughness tracks the grade more than the family. Within white steel, #3 is the forgiving entry grade, #2 is the balanced professional default, and #1 is the hardest and most brittle. Within blue steel, #2 is the most forgiving grade, #1 trades a touch of toughness for retention, and Aogami Super at full 64-66 HRC hardness is a low-to-moderate toughness steel that some makers deliberately temper softer for durability.
Compare like with like and the differences shrink. White #2 and Blue #2 at their shared 62-64 HRC window are both good, honest working steels: fine for boards and produce, wrong for bones, frozen food, twisting, and prying, like every hard Japanese blade. Blue's tungsten does not make it dramatically tougher; what it buys the owner is wear resistance, and what it buys the smith is quench forgiveness. Aogami Super's vanadium refines grain enough that many users find good AS more stable than Blue #1 despite the higher hardness, but a thin AS edge at 65 HRC still chips where a White #3 edge at 61 would roll.
The practical read: if forgiveness is your priority, choose the grade, not the color. White #3 or Blue #2 are the gentle entries; White #1 and Aogami Super are the specialists' trades where you accept chipping risk as part of the price of the edge.
Patina and rust: the equal reality
Whatever a listing implies, do not buy Aogami expecting a low-maintenance knife. Both families are fully reactive carbon steels. Both will patina from onions, tomatoes, and proteins within a session. Both will rust if left wet. Both demand the identical contract: wipe during use, hand-wash and towel-dry immediately after, oil before any storage longer than a day.
The entire difference chromium makes at half a percent is a margin of grace. Aogami tolerates a couple-minute delay before drying where Shirogami would start to spot. That is a small safety cushion while you are actively cooking, not a license to leave the blade wet, and it does not change a single line of the care routine.
The good news applies equally to both: the grey-blue oxide that forms with use is a stable patina that protects the steel and slows deeper corrosion. Do not scrub it off. Only orange-red rust is damage, and it means the blade got neglected. Many entry and mid-tier knives in both steels also ship with a kurouchi forge finish or stainless cladding, which pre-protects most of the blade face and leaves only the polished edge to manage; it is the lowest-stress way to own either steel. Two notes on reading it. First, the families mirror each other: #2 is the working default and #1 the hotter purist grade on both sides, so "White #2 vs Blue #2" is the real-world version of this whole comparison. Second, Aogami Super is the only grade in either family carrying molybdenum and vanadium (0.30-0.50% each), which is why it behaves almost like a semi-tool-steel and why some production lines run it softer, around 62-63 HRC, for stability. The shape of the table is the useful part. Neither color carries a systematic premium the way SG2 does over VG-10; at every tier you can find both White and Blue within the same band, because the billet cost difference (Blue is the more expensive steel to buy) is small next to the cost of the hands forging it. What actually moves the price is the forge's reputation, the construction (stainless-clad under $200, hand-forged hon-sanmai above it, honyaki at the summit), and scarcity. Aogami Super commands a modest premium over Blue #2 from the same maker, and White honyaki sits at the top of the whole craft because the water quench destroys a share of every batch.

- Hinoura, Sanjo: Shirogami #2 is the house standard, from the Ajikataya working line to Tsukasa Hinoura's River Jump damascus at roughly 62-63 HRC. Mutsumi Hinoura extends the palette into Blue #2 and Aogami Super, so this forge honestly straddles both families.
- Wakui, Sanjo: the signature knife is a White #2 core in stainless cladding, run hard at around 63-64 HRC per retailer documentation. One of the enthusiast world's standard value answers for carbon steel.
- Jikko, Sakai: a heritage house whose traditional single-bevel work runs the white and blue carbon families, with deep white-steel lines in the classic Sakai manner.

- Anryu, Echizen: hammered tsuchime blades over Aogami Super and Blue #2 cores at roughly 62-64 HRC, from a founding family of Takefu Knife Village.
- Shiro Kamo, Echizen: Aogami Super under rustic kurouchi is the signature line, widely considered one of the best-value routes into the steel.
- Teruyasu Fujiwara again, on the blue side: the flagship Denka runs Aogami Super at hardness retailer listings put around 64-66 HRC, with edge folklore to match.
Notice the geography repeating the chemistry. The Sakai single-bevel tradition and the Sanjo value smiths lean white; the free-forging workshops of Echizen, Tosa, and Kumamoto lean blue, because oil quenching and wider forging windows keep small-workshop yields high. Teruyasu Fujiwara, running both at the extremes, is the exception that proves how personal the choice really is.

Shirogami vs Aogami FAQ
Is White steel or Blue steel better?
Neither, and the knife world's insistence on this answer is earned. They share the same high-purity base from the same Yasugi mill; Aogami adds tungsten and chromium for longer edge retention and a more forgiving quench, while Shirogami sharpens faster and takes a marginally keener apex. Traditionalists and single-bevel users lean white; high-volume double-bevel users lean blue. It is a choice of priorities, not a hierarchy.
Does Aogami rust less than Shirogami?
Only slightly, and not enough to change how you treat it. Aogami's 0.2-0.5% chromium buys a couple of minutes of grace before spotting where white steel would already show marks; a stainless steel needs roughly 13% chromium. Both families patina with normal use and rust if left wet, and both demand the same routine: wipe during use, dry immediately after washing, oil before storage.
Which is easier to sharpen, White or Blue steel?
White, and it is the easiest-sharpening steel in common kitchen use: with no alloy carbides, it cuts fast on any waterstone and its burr releases cleanly. Blue is barely slower for #2, moderately slower for #1 and Aogami Super, whose tungsten (and, in Super, vanadium) carbides resist the stone and hold the burr a little longer. Both are far friendlier on stones than any stainless.
Is Aogami Super better than Blue #2?
Only when the heat treatment is right. Aogami Super carries more carbon and tungsten plus molybdenum and vanadium, runs 1-2 HRC points harder, and holds an edge noticeably longer, but it costs more, sharpens slower, and punishes mediocre forging. A well-treated Blue #2 beats a sloppy Super every time, which is why we say buy the smith first and the grade second.
Which grades do White and Blue steel come in?
Three each. Shirogami #1 (about 1.3% carbon, 63-65 HRC), #2 (about 1.1%, 62-64), and #3 (about 0.85%, 60-62), sorted by carbon: keener and more brittle at the top, tougher and more forgiving at the bottom. Aogami #1 and #2 mirror the white grades with tungsten added, and Aogami Super tops the family at 1.40-1.50% carbon and typically 64-66 HRC.
