What a kiridashi actually is
The word kiridashi (切出し) means, literally, to cut out or to cut off, and the full traditional name is kiridashi kogatana (切出し小刀), the little cutting-out knife. The form could hardly be simpler. It is a short, flat bar of steel, a fixed blade with no folding parts, ground diagonally at one end to a fine point and sharpened along one face only. There is no handle in the Western sense; the steel bar is the handle, and on many the bare tail is wrapped in cord, bark, or tape, or slipped into a small wooden sheath.
What makes the kiridashi a distinct tool rather than just a small knife is the combination of three features working together: a completely flat reference face, a single bevel that puts all of the cutting geometry on the opposite side, and an angled tip that lets you drive that geometry into a corner. A double-bevel utility blade cannot track a straightedge the way a kiridashi can, because its edge sits on the centerline and wanders. Lay a kiridashi's flat back against a ruler or the face of a board and the edge follows the reference exactly, scoring a crisp line with no drift. That is the whole point of the tool.
It is best thought of not as a whittling knife, though it can whittle, but as a marking and paring knife: a scribe, a layout tool, and a precise little cutter. In Japan it has served, at different times, as a schoolchild's pencil sharpener, a carpenter's layout knife, a carver's tool, and a grafter's blade in the orchard. One plain shape has quietly served all of those trades.
The angled point and the single bevel
Look at a kiridashi from the side and the defining line is the diagonal that runs from the spine down to the tip, usually somewhere around forty-five to sixty degrees off the length of the blade. That slant is not decorative. It puts the point out ahead of your hand and lets you start a cut or a scored line right at a corner, then draw the edge back toward you along a straightedge. The acute tip reaches into places a square-ended blade cannot, which is exactly what marking joinery and carving detail demand.
Now turn the blade over in cross section. One face is dead flat from spine to edge. The other carries the entire bevel, a single ground plane that meets the flat face at the cutting edge. This is a single-bevel, or chisel-ground, geometry, and it is the same principle that governs a woodworking chisel and the traditional single-edged Japanese kitchen knives. Because only one side is ground, the flat side can ride flush against a reference surface, and the bevel side controls the direction the blade wants to steer.
There is a variant worth noting for honesty's sake. Not every kiridashi is single-bevelled. Some, especially inexpensive general-purpose ones and certain vee-point marking knives, are ground on both sides so they cut equally in either hand. Those are genuine kiridashi too, but they lose the flush-reference trick that defines the classic single-bevel tool. When people speak of the kiridashi as a precision marking knife, it is the single-bevel version they mean.
Right-hand and left-hand grinds
Because the classic kiridashi is bevelled on one side only, it is inherently handed. A right-handed kiridashi carries its bevel on the right face as you hold it with the point away from you, leaving the left face flat; a left-handed one is the mirror image. This matters in use, not just in theory. To scribe a clean line tight against a straightedge, you want the flat face against the reference and the bevel facing away from it, and which arrangement is comfortable depends on which hand drives the knife.
The practical rule sellers and smiths repeat is simple: order to your handedness. A right-hander reaching for a left-ground blade, or the reverse, will find the tool fighting the direction of the cut and the flat face landing on the wrong side of the line. This is also why the double-bevel and symmetric vee-point kiridashi exist: they sidestep the handedness question at the cost of the single-bevel's reference precision. If you are left-handed and buying a traditional single-bevel kiridashi, it is worth confirming the grind before you commit, because the majority produced are right-handed by default.
Laminated: hard steel over soft iron
The better kiridashi are not made from a single homogeneous bar. They are laminated, following the same logic that governs traditional Japanese chisels, plane blades, and single-edged kitchen knives. A thin layer of hard, high-carbon steel, the hagane (呾), is forge-welded to a body of soft, low-carbon iron or steel, the jigane (地鉄). In the common two-layer arrangement the hard steel forms the flat cutting face and the soft backing forms the bevel side and the bulk of the bar; the edge itself is the exposed hard-steel layer.
The reason is the same conflict that runs through all blade making. Hard high-carbon steel takes and holds a keen edge but is brittle and can chip or crack. Soft iron is tough and forgiving but will not hold an edge at all. Bonding the two gives you a knife that carries a hard, sharpenable edge supported by a shock-absorbing spine, and that is far easier to sharpen than a fully hardened mono-steel blade, because most of what your stone removes is the soft backing, not the hard cutting layer.

Shirogami and Aogami, the two carbon steels
The hard cutting layer in a traditional kiridashi is almost always one of two Japanese carbon steels, both refined by Hitachi Metals at Yasugi and both named for the color of the paper they were historically wrapped in. They are the same steels prized in high-end woodworking tools and single-bevel kitchen knives, which is why a good kiridashi feels metallurgically serious out of all proportion to its size.
Shirogami (白紙), white paper steel, is a clean, simple high-carbon steel with very few alloying elements. It takes an exceptionally keen edge and is beloved for exactly that, but it is less forgiving of heat and moisture and rusts readily if neglected. Aogami (青紙), blue paper steel, adds small amounts of chromium and tungsten, which improve edge holding and toughness at some cost to the ultimate keenness and ease of sharpening. Among the Aogami grades, Blue No. 2 is a common and well-regarded choice for tools like this, valued for resisting chipping while still cutting well as it dulls.

In the school bag and the workshop
For much of the twentieth century the kiridashi was an unremarkable fixture of Japanese daily life, and its most familiar role was in the classroom. Widely reported accounts describe the small kiridashi as a standard item in schoolchildren's pencil cases, used to sharpen pencils by hand and for cutting and carving tasks in art and craft classes. That everyday-in-the-satchel role is the one older Japanese adults most often remember, and it is why the tool is sometimes introduced to outsiders simply as the Japanese pencil-sharpening knife.
That framing undersells it. The same shape has always done serious work for adults. Carpenters and joiners use the kiridashi as a marking and paring knife, scoring layout lines and cleaning up cuts where a wide chisel will not fit; woodblock and figure carvers reach for it for detail work. It appears in accounts of temple carving, bamboo work, fabric and paper cutting, and in the orchard and nursery, where a keen single-bevel blade is used for grafting, the delicate cuts that join a scion to rootstock. One plain tool has quietly threaded through Japanese craft, farming, and schooling alike.
A note on the school story. The pencil-sharpening-knife image is real and often repeated, but the details, how universal it was, and exactly when it faded, come mostly from tool sellers and craft writers rather than formal history, and they vary in the telling. Treat it as well-attested tradition rather than a precisely documented statistic. What is not in doubt is that the kiridashi was, and remains, a genuine working tool of Japanese craft.
Where they are made: Miki and Sanjo
Kiridashi are forged across Japan's tool-making regions, but two names come up again and again, and both are historic blacksmith towns rather than single workshops. Understanding them is the honest way to talk about "where a kiridashi comes from," because the answer is a town and a lineage, not usually a famous individual.
Miki, Hyogo
Miki, in Hyogo Prefecture, has been a center of Japanese toolmaking since the Edo period and is renowned for chisels, planes, saws, and knives. It is the kind of place sometimes likened to a Japanese Sheffield, a town whose identity is built on edged tools. Kiridashi and the closely related carving knives are a natural part of that output. One verifiable Miki maker of these knives is the Ikeuchi workshop, which by its own account has hand-forged blades in Miki since 1953 across three generations of the family, and whose Mikihisa-branded marking knives are sold as small single-bevel kiridashi.
Tsubame-Sanjo, Niigata
In Niigata Prefecture, the neighboring cities of Tsubame and Sanjo form another powerhouse of Japanese tool and metalware production, covered on our Tsubame-Sanjo reference. Sanjo in particular is a deep well of hand-forged edge tools. A verifiable Sanjo maker of kiridashi is the Baishinshi smithy: multiple sellers describe these marking knives as hand-forged in Sanjo by a family with a long forging lineage, with the current smith recorded as Umeda Kunimitsu, a seventh-generation blacksmith. As with any small-workshop attribution, the generational and founding claims trace to sellers and the workshop itself, so we present them as reported rather than independently documented.
Those are two verifiable names, one per town, offered as examples. Many other smiths in both regions make excellent kiridashi, and a blade need not carry a famous maker's stamp to be a fine tool.
Kogatana, kozuka, and the sword connection
The kiridashi's full name, kiridashi kogatana, contains a word with a longer history. Kogatana (小刀) simply means small knife, and in the world of the Japanese sword it names a specific object: the little utility blade that was carried in a slot in the scabbard of a sword or short sword. That small blade's decorated handle is the kozuka (小柄), and the terms are often used loosely together. The kogatana was a general-purpose cutting tool rather than a fighting weapon, used, by tradition, for everyday small tasks.
It is tempting to draw a straight line from that sword-fitting knife to the modern craft kiridashi, and you will see the connection asserted confidently online. State it carefully. Both are small single-purpose Japanese knives sharing the kogatana name and the idea of a compact utility blade, so the craft kiridashi plainly belongs to the same cultural family. But the popular claim that scabbard kozuka blades were routinely reforged into workshop kiridashi is folklore that is easy to repeat and hard to verify. The word kogatana links them; a documented, continuous manufacturing lineage from sword fitting to marking knife is not something we can stand behind, so we present it as shared heritage and vocabulary and leave the romantic version flagged as lore.
The honest through-line is broader anyway. The same forging culture that produced sword blades and their fittings also produced the chisels, plane irons, kitchen knives, and marking knives of everyday Japan, using the same laminated hard-and-soft construction. The kiridashi is a member of that family by construction and craft, whether or not any given example descends from a sword fitting.
How to use one
Using a kiridashi well comes down to respecting the flat face and the single bevel. A few principles cover most of the work.
- Marking against a reference. Lay the flat face flush against your straightedge or workpiece and draw the point toward you. The flat side hugs the reference and the edge scores a clean line exactly where the reference is, with none of the wander a centered double bevel gives.
- Paring and detail cuts. The acute angled tip lets you reach into corners and start cuts precisely. For controlled paring, keep the bevel side toward the waste and let the flat side define the finished surface, the same logic as a chisel.
- Mind the handedness. Because the geometry is one-sided, a right-hand grind wants to be driven by the right hand with the flat face to the left of the line, and vice versa. If the knife seems to fight you, check whether its grind matches your hand.
- Cut away from yourself where you can. It is a fixed blade with a very keen, exposed edge and no guard. The tail is often bare or lightly wrapped, so a firm, deliberate grip and cuts directed away from your body and free hand are the sensible defaults.
None of this is exotic. A kiridashi rewards the same unhurried control any single-bevel edge tool asks for, and it becomes intuitive quickly once you stop treating it like a pocket knife and start treating it like a small, sharp chisel you steer by hand.
How to sharpen one
A single-bevel carbon-steel kiridashi is one of the easier blades to sharpen well, because almost all of the work happens on one side. The method mirrors how traditional single-edged Japanese blades are maintained.
Work the bevel on the stone
Lay the single bevel flat on a waterstone and match its existing angle, then hone with steady strokes until you raise a fine burr along the whole edge. Because the cutting layer is thin hard steel over soft backing, the steel responds quickly. Progress from a medium stone to a finer finishing stone for a keener edge.
Flatten the back: uraoshi
The flat reference face must stay truly flat, so it is refreshed by laying it dead flat on the stone and taking off the burr, the technique known on single-bevel blades as uraoshi (裏押し), pushing the back. Use only a fine finishing stone here, keep the face flat against the stone, and use light, controlled pressure; the goal is to remove the burr and refine the edge, not to grind a new angle into the back. Keep your stones flat, because a hollow stone will round the very face that has to stay flat.
Alternate and finish
Work bevel, then back, then bevel again lightly, chasing the burr off until the edge is clean and keen. A few finishing passes and a strop, if you use one, complete the job. Then wipe the carbon steel dry and give it a thin film of oil before it goes away.
A caution on terminology, stated plainly so we do not overclaim: on traditional single-bevel kitchen knives the back is deliberately hollow-ground (the urasuki) leaving only a thin flat land, and uraoshi refers to maintaining that land. A simple kiridashi back is usually just flat rather than elaborately hollowed, so treat uraoshi here as the same principle, keep the back flat and true and deburr it on a fine stone, applied to a simpler blade.
