VG-1: The Steel VG-10 Grew Out Of
Takefu Special Steel's early V Gold grade. Same mill, same carbon, no cobalt. The quietly excellent stainless that built reputations for decades while its younger sibling took the spotlight.
VG-1 is essentially VG-10 without the cobalt: a hard, fine-grained, tough Japanese stainless that costs less and asks less.
VG-1 is a high-carbon stainless from Takefu Special Steel, the Echizen mill behind VG-10. It carries roughly 1% carbon and 13-15% chromium, hardens to 58-61 HRC, and gives up a little wear resistance and corrosion resistance to VG-10 in exchange for easier sharpening and a reputation for toughness. Cold Steel built its famous San Mai III blades on it for years, and small Echizen workshops still run it today. If VG-10 is the famous sibling, VG-1 is the capable older one nobody brags about.
What VG-1 is
VG-1 (V Gold 1, sometimes written V金1号) is a high-carbon, molybdenum-bearing stainless cutlery steel made by Takefu Special Steel of Echizen City, Fukui Prefecture, the mill profiled on our Japanese steel mills page. It is the foundational grade of Takefu's V Gold series: retailer documentation drawing on Takefu materials describes it as the cornerstone the rest of the family (VG-2, VG-5, VG-10, and eventually the powder-metallurgy SG2) was built out from. Takefu has not published a precise introduction date for VG-1, so we will not invent one.

Manganese and silicon limits are not consistently published for VG-1, and sources disagree on whether it carries a small vanadium addition: some retailer datasheets list roughly 0.25% vanadium, while the most commonly cited composition tables omit it. Where the mill has not published a figure, we say so rather than guess.
The important numbers are carbon and chromium. At roughly 1% carbon, VG-1 sits in the same hardness class as VG-10 and AUS-10, a full step above the ~0.75% carbon of AUS-8. The 13-15% chromium keeps it genuinely stainless, though at the lower end of that range it trails VG-10's corrosion resistance slightly.
Where VG-1 sits in the V Gold family
The simplest way to understand VG-1 is as the trunk of the V Gold tree: on our Steel Family Tree it sits at the base of the Takefu branch, with VG-2, VG-5, VG-10, and SG2 growing out above it. VG-2 and VG-5 lowered carbon for tougher, cladding-friendly grades. VG-10 kept VG-1's roughly 1% carbon and raised the stakes: chromium to about 15%, molybdenum to about 1%, a vanadium addition, and the famous ~1.5% cobalt.
That cobalt is the family's most misunderstood ingredient. Knife Steel Nerds' analysis concluded it was likely added for tempering resistance (so blades could survive high-temperature coating processes) and to strengthen the matrix around the carbides. It is not a magic sharpness element. Which is why VG-1, the cobalt-free recipe, behaves so much like VG-10 in a kitchen: the two steels share their skeleton, and the differences show up at the margins of wear resistance and stain resistance, not in day-one sharpness.
One naming trap worth flagging: VG-1 has nothing to do with Aichi Steel's AUS series or with V-toku carbon steels. The V is Takefu's V Gold branding. If a listing conflates VG-1 with "V1" carbon steel or calls it "budget VG-10 from a different mill", the listing is wrong, and our fake checker covers how mislabeled steel claims usually look.
What VG-1 feels like in use
Out-of-box edge and sharpness ceiling
With ~1% carbon and a fine grain structure, VG-1 takes the same screaming edge as VG-10 off the same stones. Sharpness is apex geometry, and VG-1's apex is every bit as clean. Retailer documentation consistently describes it as fine-grained and notably pure for an ingot steel.
Edge retention
Good, a clear step above AUS-8, a small step below VG-10. The lower molybdenum content (0.2-0.4% versus VG-10's roughly 1%) and the absence of cobalt mean somewhat less wear resistance at the same hardness. In home-kitchen terms: expect months rather than weeks between real sharpenings, with VG-10 stretching that window modestly further.
Toughness
This is where VG-1 earned its outdoor-knife reputation. Independent commentary (the zknives steel reference, for one) rates it a bit tougher than VG-10, and Cold Steel spent two decades marketing exactly that quality. One caveat for honesty: at least one Japanese retailer describes VG-1 as slightly more chip-prone than VG-10 in thin kitchen grinds. The two steels are close; heat treatment and blade geometry will matter more than the alloy difference. Sakai Ichimonji Mitsuhide's account of its early VG-1 production line is instructive: the first batch of blades was too brittle until the hardening process was refined, after which the line ran successfully for roughly forty years. Same steel, different heat treatment, opposite result.
Sharpening response
Easier than VG-10, harder than AUS-8. The modest carbide load means standard waterstones cut it without complaint, and it deburrs more cooperatively than VG-10, which is notorious for stubborn wire edges. Some sharpeners note it can feel slightly glassy ("slipping") on very hard stones compared to carbon steel; a fresh, well-soaked synthetic stone eliminates the sensation.
Stainless behavior
Genuinely stainless in normal kitchen use with hand-washing and drying. At 13-15% chromium it sits slightly below VG-10's corrosion resistance, and Japanese retailers note it can show faint white pitting if neglected, particularly around salt and long soaks. Basic care, the fifteen-second hand-wash and towel-dry routine, keeps it spotless.

VG-1 vs VG-10
The family argument. VG-10 buys slightly better wear resistance, a touch more corrosion resistance, and the marketing halo, at a higher steel cost and with fussier deburring on the stones. VG-1 answers with easier maintenance and, by most accounts, marginally better toughness. Blind, in a kitchen, most cooks could not reliably tell a well-treated VG-1 blade from a well-treated VG-10 one. Priced honestly, VG-1 should cost less; when it does, it is one of the best value propositions in Japanese stainless.
VG-1 vs AUS-8
Different tiers. AUS-8's ~0.75% carbon caps it at a softer, tougher, easier-sharpening place in the market. VG-1's ~1% carbon supports higher hardness and clearly longer edge life. If AUS-8 is the honest entry point, VG-1 is the honest step up: mid-tier performance without the mid-tier logo tax.
VG-1 vs AUS-10
Closest cross-mill matchup: both are cobalt-free, roughly 1% carbon stainless steels hardening to about 60 HRC. On paper they are near twins; AUS-10 carries a small vanadium addition, VG-1 leans on its Mo-Cr double carbides. In practice, pick the maker, not the alloy. Which brands and makers actually use VG-1
- Cold Steel: the most famous VG-1 user. For years the company's San Mai III blades (Trail Master, Master Hunter, SRK-era fixed blades) ran a VG-1 core between softer stainless cladding, and Cold Steel marketed the steel's strength and shock resistance aggressively. Newer San Mai production has largely moved to VG-10 cores, but VG-1 San Mai III models still circulate and remain sought after.
- Masutani: the small family workshop in Echizen City, a short distance from the Takefu mill itself, builds much of its line on VG-1 at around 58 HRC per retail specs. Local steel, local maker, honest price: the VG-1 story in miniature.
- Sakai Ichimonji Mitsuhide: the Osaka knife house has run a VG-1 production line (its G-Line series) for roughly four decades, by its own account.
- Nenohi / Nenox: the S1 professional line is documented as VG-1, proof the steel can carry a premium price when the grinding and fit-and-finish justify it.
- Yoshihiro: sells VG-1 gyutos in soft stainless cladding (its "Gold Clad" warikomi construction) at entry-to-mid prices.
You will sometimes see Tojiro's colored-handle and entry lines described online as VG-1. Tojiro's own documentation lists the Color series as molybdenum-vanadium stainless and its flagship DP line as VG-10, so we do not list Tojiro as a verified VG-1 user. As always on this site: when we cannot verify a claim against the maker's own materials, it does not go in the list.
The broader pattern: VG-1 shows up where makers choose steel on performance per yen rather than on label recognition. It is also used outside cutlery, in hairdressing scissors and food-processing machine blades, which says something about how industry (as opposed to marketing) rates its edge stability.
When VG-1 is the right steel
Buy VG-1 if:
- You want VG-10-class kitchen performance without paying for the VG-10 name.
- You sharpen your own knives and prefer a steel that deburrs cleanly.
- You are buying from a small Japanese workshop (Echizen especially) where VG-1 is the house steel and the heat treatment is the real product.
- You want a tough, hard stainless for a larger blade or a knife that gets worked hard.
Skip VG-1 for:
- Maximum edge retention: VG-10, AUS-10, or powder steels like SG2 hold a working edge longer.
- Maximum corrosion tolerance: VG-10's higher chromium buys a real, if small, margin.
- Damascus aesthetics: VG-1 is almost always sold in plain or simple clad finishes; the damascus market standardized on VG-10 and AUS-10 cores.
Living with VG-1
Daily care
Hand-wash, towel-dry, store dry. VG-1 will not patina from tomatoes or citrus, but it is at the lower-chromium end of the stainless kitchen steels, so do not leave it soaking or sitting salty overnight. No dishwashers, as with every hard, thin Japanese edge.
Angles and stones
15 degrees per side is the sensible default, and VG-1's toughness tolerates a slightly more acute edge than VG-10 does at the same hardness if you want to chase one. A 1000-grit synthetic waterstone does the main work; finish at 3000-6000 grit. Unlike VG-10, VG-1 rarely fights you at the deburring stage: alternate progressively lighter edge-leading strokes and the wire edge releases cleanly. If the stone feels glassy under the blade, refresh the stone surface; the steel's fine carbide structure gives less tactile feedback than coarser alloys.
Honing
A weekly pass on a ceramic rod extends edge life meaningfully at 58-60 HRC. Skip grooved butcher steels, which are too aggressive for hard Japanese edges.

What is the difference between VG-1 and VG-10?

Does VG-1 rust?
Not in normal use. With 13-15% chromium it is genuinely stainless. It sits slightly below VG-10 in corrosion resistance, so avoid long soaks and salty neglect; hand-washing and drying is all the routine it needs.
Does Cold Steel still use VG-1?
Cold Steel built its San Mai III reputation on VG-1 cores and sold them for years; most newer San Mai production has shifted to VG-10 cores, though VG-1 models remain in circulation and some listings still carry the steel.
Who makes VG-1?
