VG-10 holds an edge meaningfully longer. AUS-8 sharpens faster, forgives more, and costs less. The right choice depends on who is holding the whetstone.

VG-10 runs 60-62 HRC with a cobalt-refined edge that holds its paper-cut standard for roughly 3-6 months of daily home use. AUS-8 runs 58-60 HRC and holds a working edge for roughly 4-8 weeks in the same conditions, then comes back to sharp in half the time on any waterstone. If you already maintain your own knives, VG-10 earns its premium. 01 · The contenders

What each steel actually is

AUS-8: the honest entry-level stainless

AUS-8 is a high-carbon stainless steel made by Aichi Steel Corporation of Tokai City, Aichi Prefecture. It is the middle member of Aichi's AUS cutlery family (AUS-6, AUS-8, AUS-10), sometimes labeled 8A on export knives, and it has been the default mid-tier Japanese production stainless for decades: roughly 0.75% carbon, 13-14.5% chromium, hardened to 58-60 HRC when treated well. It is the steel most first-time Japanese-knife buyers actually encounter, whether they know it or not, because a huge share of Seki production and OEM work runs on Aichi stainless. VG-10: the mid-premium standard

VG-10 is a high-carbon, high-chromium stainless from Takefu Special Steel of Echizen City, Fukui Prefecture, the flagship of Takefu's V Gold series. Its signature is a 1.3-1.7% cobalt addition that lets the steel harden to 60-62 HRC without turning brittle, and it rose to worldwide prominence in the 1990s when Seki's production houses adopted it at scale. It is the steel that made stainless credible in serious kitchens, and the benchmark every mid-premium Japanese production knife is measured against. Our full reference is at VG-10.

Clear one myth immediately, because it shapes how people frame this comparison: VG-10 is not "AUS-8's big brother." The two steels come from two different, unrelated mills. AUS-8's big brother is AUS-10, from the same Aichi furnaces. VG-10 is a competitor from another prefecture that happens to fight in the tier above. Section 07 covers the mills properly.

Our conflict of interest, stated plainly

The Okami Classic, our $149.99 entry knife, runs AUS-8 at 58-60 HRC. We chose the steel deliberately for the first-knife tier, and we obviously benefit if you agree with that reasoning. So judge this page by its least convenient admissions: VG-10 holds an edge two to three times longer than AUS-8, takes a finer polish, and is the better steel for anyone who already maintains their knives. Every number here comes from our own steel references, which say the same things whether or not a sale is attached.

Two rows in that table do nearly all the work. First, carbon: AUS-8's roughly 0.75% is low enough to keep the steel tough and forgiving, high enough for a real Japanese working hardness. VG-10's roughly 1.0% supports a harder, finer, longer-wearing edge. Second, cobalt: VG-10's defining addition lets it carry that extra hardness without chipping catastrophically, and refines the carbide structure so the edge stays cleaner under magnification.

Everything you will feel at the board and the stone, the longer VG-10 edge, the faster AUS-8 sharpening, the extra AUS-8 toughness, traces back to those two numbers.

03 · Hardness and edge life

Edge retention: VG-10 wins, meaningfully

No hedging, and no home-team discount: VG-10 holds an edge meaningfully longer than AUS-8, and this is the property its entire price premium is built on.

In practical terms, from our steel references: with daily home use and a ceramic hone before each session, an AUS-8 edge holds its standard for roughly 4-8 weeks before noticeable degradation on tomato skin. A VG-10 edge holds its paper-cut standard for roughly 3-6 months in the same conditions. That is not a rounding error; it is a different maintenance rhythm. On our 10-point steel ratings, VG-10 scores 7/10 for edge retention against AUS-8's 4.5/10.

Day one, however, is a tie that surprises people: sharpness is geometry, not alloy. AUS-8 takes the same screaming edge off the same stones as VG-10, and a well-ground AUS-8 blade passes the paper-cut test out of the box just like a good VG-10 blade does. What AUS-8 cannot do is hold that peak edge as long. Expect equal sharpness at the start and a shorter glide back to "merely sharp."

One qualifier both our references insist on: heat treatment matters more than the label. VG-10 done well lands at 59-62 HRC with most good knives at 60-61; done poorly, it leaves the factory soft enough to roll on a carrot. AUS-8's achievable window is roughly 57-60, and the steel's bad reputation comes almost entirely from cut-rate factories under-hardening it to 55-56. A well-treated AUS-8 blade will outperform a badly treated VG-10 blade every single day. Ask who hardened the blade before you ask what the label says.

04 · Toughness and sharpening

Where AUS-8 wins back its ground

Toughness: the softer steel forgives more

Our steel references rate AUS-8's toughness at 6.5/10, one of the best scores among mainstream stainless kitchen steels, against VG-10's 4/10. At 58-60 HRC with a low carbide load, AUS-8 tolerates lateral force, edge twisting, and the occasional harder-than-intended contact that real kitchens produce. VG-10's hardness comes with fragility at thin edges: tips break if twisted, and blades chip against bones, frozen food, and glass boards. None of that is unique to VG-10, every 60+ HRC steel shares it, but the practical difference is real: where VG-10 chips, AUS-8 tends to roll, and a rolled edge is a thirty-second hone rather than a repair session on a coarse stone.

Sharpening: AUS-8 is the teacher, VG-10 the homework

AUS-8 rates 8.5/10 for ease of sharpening, among the easiest kitchen steels there are: it grabs a 1000-grit synthetic quickly, raises a clean burr in 8-12 strokes, gives fast and encouraging feedback, and forgives an imperfect angle. If you are learning whetstone work, AUS-8 is an excellent teacher. VG-10 rates 7/10: still friendly by hard-steel standards, building a burr within a dozen strokes on ordinary stones, but noticeably slower than AUS-8 and with a slightly tenacious burr that likes to flip rather than shear off. Neither needs diamond plates or exotic abrasives; a 1000/6000 combination stone handles both comfortably. Both take the same 15 degrees per side as a sensible default.

Corrosion: effectively a tie

Both are legitimately stainless and neither demands care discipline beyond hand-wash and towel-dry. Our references rate AUS-8 at 7/10 and VG-10 at 7.5/10 for corrosion resistance; VG-10 carries slightly more chromium, and either can spot if left wet with salt or acid for days. In a normal kitchen you will never see either rust. The dishwasher remains forbidden for both, for the edge's sake rather than for rust.

Prices are Okami estimates: we synthesize street prices from the retail listings we track for our brand guides, not manufacturer MSRPs, and they drift with the market.

The shape of this table is stranger than the SG2 vs VG-10 version, and it is worth being honest about why. Thanks to Tojiro, the cheapest legitimate VG-10 costs about the same as mid-band AUS-8. The Tojiro DP santoku starts around $60 and the 210mm gyuto around $70, inside the band where most named-maker AUS-8 knives live. What the AUS-8 tier gets you at equal money is usually not a cheaper blade but a different one: often better handles, hammered finishes, or Damascus cladding (see Shizu's Shikisai Miyako, an AUS-8 Damascus flagship), plus the friendlier steel itself. Above roughly $150, VG-10 takes over the market almost completely, and the mainstream premium band from $150 to $300 is VG-10 and VG-MAX territory. Both steels sit inside what our price guide calls the value sweet spot, roughly $80 to $150, where factory precision and named steels overlap.

06 · The honest fork

When AUS-8 is genuinely right, and when to spend up

AUS-8 is genuinely the right call if:

  • This is your first Japanese knife and you are not yet sure the category is for you. AUS-8 delivers the real experience, the thin grind, the acute edge, the fall-through-a-tomato moment, at the lowest commitment, and it is the gentlest possible introduction to Japanese hardness for anyone coming from a German knife.
  • Your household is hard on knives. Shared kitchens, occasional bone contact, hurried washing, a partner who twists cuts: AUS-8's toughness absorbs mistakes that would chip a 60+ HRC edge. A knife that forgives is worth more than a knife that impresses, if the mistakes are coming either way.
  • You are learning to sharpen. Fast burr, quick feedback, forgiving angles. Learning on VG-10 is possible; learning on AUS-8 is pleasant. Some experienced cooks stay with AUS-8-class steel on purpose, preferring to sharpen a forgiving steel monthly over babying a harder one.

Spend up to VG-10 if:

  • You already maintain your knives and want months, not weeks, between real stone sessions. This is the single biggest quality-of-life difference between the steels, and for a practiced owner it is worth the money.
  • You want a finer, longer-lived polish. VG-10's harder matrix holds a high-grit edge that AUS-8 sheds within days; polishing AUS-8 past 6000 grit is mostly wasted effort.
  • You are buying a forever knife. Higher hardness survives more sharpening cycles at a finer edge. AUS-8 is an honest first chapter; VG-10 (or AUS-10, or beyond) is the better long-term companion for a cook who already knows their habits.

What you should not do is treat the two as moral categories. AUS-8 is not junk steel; it is a clean, consistent alloy from one of Japan's major specialty mills, run hard in working kitchens every day, with a reputation muddied only by the bottom of the market. And VG-10 is not snobbery; the edge-life difference is real and measurable. Both steels are honest. Only mismatched expectations are not.

07 · The mills

Aichi vs Takefu: two furnaces, no family tree

Aichi Steel Corporation, headquartered in Tokai City, Aichi Prefecture, is a Toyota Group company, incorporated in 1940 when Toyota's in-house steelmaking was spun out. Its cutlery alloys are a small, famous corner of a business that mostly serves forged automotive components. The AUS family is graded by carbon: AUS-6 at the soft end, AUS-8 in the middle, AUS-10 at the top near 1.0% carbon. The series has fed Japanese knife factories, above all in nearby Seki, for decades: local, proven, consistently supplied.

Takefu Special Steel, founded in 1954 in Echizen City, Fukui Prefecture, grew up inside one of Japan's oldest blade regions and supplies the V Gold series: VG-1, VG-2, VG-10, the VG-MAX derivative made for Kai, and the powder-metallurgy SG2 that defines the tier above. One under-appreciated part of its business: Takefu sells pre-laminated billets, VG-10 cores already clad in stainless or suminagashi layers, which is why so many mid-premium Damascus knives from different brands feel closely related.

The two companies are unrelated, which matters for how you read marketing. "VG-10 is the upgrade from AUS-8" is retail shorthand, not metallurgy: the actual in-family upgrade from AUS-8 is AUS-10, Aichi's roughly 1.0-1.1% carbon sibling at 60-61 HRC, which competes with VG-10 directly and is the steel our own Premium Damascus uses. AUS-8 (and honest neighbors)

  • Okami Classic: our 8" chef's knife, AUS-8 at 58-60 HRC, $149.99. Declared here in the list like everyone else, because that is the point of this page.
  • Seki Kanetsugu Pro-M and Pro-S: the Seki house's professional lines, built openly on AUS-8.
  • Kanetsune and Kai Seki Magoroku: heavy users of Aichi stainless across their kitchen catalogs, with AUS-8 in many KC-series and select Magoroku lines.
  • Shizu Hamono Shikisai Miyako: proof the steel is not confined to plain blades, an AUS-8 core under Damascus cladding as an export flagship.
  • Misono Molybdenum, with a caveat we will not round off: Misono's entry line runs a molybdenum-vanadium stainless commonly identified as an AUS-8 type, at roughly 57 HRC. Both behave like AUS-8 on the stone and the board; neither is literally labeled AUS-8.

VG-10 (and its close derivative)

  • Tojiro DP: the reference budget VG-10, a genuine cobalt-alloy core at around 60 HRC in 13-chrome cladding. The 210mm F-808 gyuto is probably the most recommended first serious Japanese knife in the world, and the single best argument against paying more for the steel name.
  • Shun, the famous cousin: current Shun Classic and Premier run VG-MAX, a proprietary Takefu derivative built on the VG-10 formula with small tweaks. Earlier Classics used VG-10 itself; in hand the two are near-identical. If you have heard of exactly one knife in this comparison, it is probably this one, wearing the house recipe.
  • Kasumi, Mcusta Zanmai, Enso HD, and Yaxell Ran: the Seki mid-premium cluster, all VG-10 cores under Damascus or hammered cladding.
  • Sakai Takayuki: the 33-layer Damascus gyutos that introduced many Western cooks to Sakai are VG-10 core; usefully for this page, the 45-layer line runs AUS-10 instead, the two mills sharing one brand's catalog.
