Sixty-seven layers of steel, folded and forge-welded around a hardened AUS-10 core. When the blade is etched, those layers reveal a pattern as individual as a fingerprint. No two Okami Premium knives look the same. The one you hold was never made before and will never be made again.

The Damascus cladding is not decoration. Each layer boundary creates a micro-texture on the blade face that reduces friction and helps food release cleanly. At its core, AUS-10 steel hardened to 60-61 HRC delivers the kind of edge retention that serious cooks demand. AUS-10 is the harder, finer-grained sibling of AUS-8. With carbon content near 1.1% and hardened to 60-61 HRC, it takes an exceptionally keen edge and holds it significantly longer. Where AUS-8 might need honing every few days, AUS-10 keeps cutting for weeks.

The 67 layers of Damascus cladding serve a dual purpose. Structurally, the softer outer layers protect the harder core from lateral stress, making the blade more resilient than a mono-steel knife of equal hardness. Functionally, the layer boundaries create micro-valleys on the blade surface that trap air and reduce suction, allowing food to release cleanly during cuts.

And then there is the visual reality: each blade emerges from the forge with a wave pattern that has never existed before. Care Quick-Start

  • Hand wash only with warm water and mild soap immediately after use. Dry completely before storing.
  • Never put your knife in the dishwasher. The harsh detergents and jostling will damage the Damascus pattern and dull the edge.
  • Use a wooden or soft plastic cutting board. Avoid glass, ceramic, marble, or metal surfaces.
  • Hone with a ceramic rod before each use. Sharpen on a 1000/3000 grit whetstone every 3-4 months (AUS-10 holds its edge longer).
  • Store on a magnetic knife strip, in a knife block, or with a blade guard. The Damascus pattern develops character over time; a light coat of camellia oil preserves it beautifully.

Is AUS-10 good steel for a chef knife?
AUS-10 is a premium Japanese stainless steel, a step above AUS-8 in hardness and edge retention. At 60-61 HRC, it sits in the range used by many high-end Japanese knife makers. The finer grain structure takes a keener edge and holds it longer than softer steels. Combined with 67-layer Damascus cladding, it delivers outstanding performance and resilience.
How do I sharpen this knife?
Use a combination whetstone (1000/3000 grit). AUS-10 is harder than AUS-8, so sharpening takes slightly longer but the edge lasts much longer between sessions. Can I put it in the dishwasher?
Absolutely not. Beyond dulling the edge, dishwasher detergent can damage the Damascus pattern over time. Hand wash with warm water and mild soap, dry immediately, and the Damascus pattern will only get more beautiful with age.
What cutting board should I use?
Wood (maple, walnut, hinoki) or high-density polyethylene (HDPE) boards are ideal. These materials are gentle on the edge. Avoid glass, granite, ceramic, bamboo, or metal surfaces, which will rapidly dull any knife.
Does it come with a warranty?
Yes. Every Okami blade is backed by our Lifetime Craft Warranty covering defects in materials and workmanship. Normal wear and accidental damage are not covered, but we offer affordable resharpening and restoration services.
What is the difference between the Classic and Premium?
