ZA-18: Aichi's answer to VG-10
A cobalt-alloyed premium stainless from Aichi Steel, the mill behind the AUS series. On paper it matches or exceeds VG-10 in nearly every element that matters. Almost nobody outside the trade has heard of it. This page explains both facts.
ZA-18 is Aichi Steel's premium cobalt stainless: VG-10 performance class, more chromium, and a fraction of the name recognition.
Commonly documented at roughly 1.0-1.2% carbon, 17-18% chromium, with molybdenum and about 1.8% cobalt, it hardens to about 60-62 HRC in production knives and is repeatedly positioned as a direct VG-10 competitor with a corrosion-resistance edge. It appears in well-regarded Damascus lines from Sakai Takayuki, Tsunehisa, and Kanetsugu, usually with far less fanfare than the steel deserves. Aichi publishes no consumer datasheet, so composition figures here are importer-documented ranges, labeled as such.
What ZA-18 actually is
ZA-18 (sometimes written ZA18) is a high-carbon, high-chromium, cobalt-alloyed stainless blade steel from Aichi Steel Corporation (愛知製鋼) of Tokai City, Aichi Prefecture, the Toyota-group mill whose AUS series carries a huge share of Japan's honest mid-market knives, including both of ours. Where AUS-8 and AUS-10 are Aichi's workhorse grades, ZA-18 is the mill's premium cutlery stainless: the grade Aichi fields in the same arena where Takefu's VG-10 made its name.
Japanese trade documentation describes ZA-18 as a cobalt-bearing stainless developed to resolve the classic tension of knife steel: cutting performance and rust resistance at the same time. The cobalt addition supports hardness and edge stability, the unusually high chromium content, at the top of the range for mainstream blade steels, drives corrosion resistance, and molybdenum backs up hardenability and wear resistance. Long-standing importer documentation adds a development detail we can attribute but not independently confirm: that ZA-18 was developed by Osaka Clad Co., Ltd. together with Aichi Steel specifically to compete with, or outperform, VG-10. We pass that along as reported.
In the market, ZA-18 almost always appears the same way: as the cutting core of san-mai or multi-layer Damascus blades, clad in softer stainless, from OEM-driven brands and Sakai wholesale houses. It is a steel you meet inside a knife, rarely on a banner. That distribution pattern, as we argue below, is most of the reason you have not heard of it.
The mill behind it
Aichi Steel is the volume workhorse of Japanese knife steel: industrial scale, consistent chemistry, reliable supply. It comes from the same disciplined mill as the AUS series, positioned one tier up, and the knives built on it inherit that consistency.
Composition as documented
An honesty note before the table: Aichi Steel does not publish a public consumer datasheet for ZA-18 the way Takefu publishes VG-10's specification. The figures below are the ranges consistently documented by long-standing specialty importers and steel databases, and they agree with each other closely, but they are trade documentation, not a mill press release. We print them with that label.

Read as a design, ZA-18 is VG-10 with every dial nudged: a touch more carbon at the top of the range, distinctly more chromium, slightly more molybdenum, and more cobalt. The chromium figure is the standout. At 17-18%, Japanese retail documentation calls it one of the highest chromium contents among common blade steels, which is the metallurgical basis for the corrosion-resistance claims that follow ZA-18 everywhere. It is a conventional melted steel; nothing in the documentation describes it as powder metallurgy, and occasional online claims to the contrary are unsupported.
ZA-18 vs VG-10
This is the comparison the steel was reportedly built for, so let us be precise about what is documented, what is claimed, and what is unknown:
- Same performance class. Documented. Similar carbon, similar cobalt logic, similar production hardness. Nobody serious positions these steels in different tiers, and neither do we. A well-made ZA-18 knife and a well-made VG-10 knife are siblings in daily use: fine edges, very good retention, low drama.
- Corrosion resistance: the commonly claimed ZA-18 advantage. The 2-3 extra points of chromium are real chemistry, and maker and retailer documentation consistently credit ZA-18 with excellent, even class-leading, rust resistance. We rate the direction credible and the size of the advantage unmeasured; no controlled corrosion comparison between the two has been published that we could find.
- Edge retention and hardness: roughly on par, claims of an edge unproven. Some sellers claim ZA-18 outperforms VG-10 outright, pointing to the higher top-of-range carbon and cobalt. Production hardness overlaps almost completely (about 60-62 for both, with some ZA-18 listings at 63). Absent independent testing, on par is the honest verdict and outperforms is marketing until proven.
- Toughness and chipping: thin data, no red flags. Japanese documentation credits the cobalt with supporting toughness and chip resistance. Owner feedback on ZA-18 lines is generally positive, but the steel has nothing like VG-10's mountain of long-term evidence in either direction.
- Track record: VG-10 by a landslide. Documented. Thirty years, thousands of lines, every failure mode mapped. ZA-18's public history is far shorter and thinner. If certainty is what you are buying, VG-10 remains the certain choice.
Our overall read: ZA-18 is a legitimate VG-10 peer with a plausible corrosion edge, not a giant killer and not a compromise. When a ZA-18 knife is cheaper than the equivalent VG-10 knife, and it often is, the steel name difference is a discount worth taking.
ZA-18 and the AUS family
Because ZA-18 comes from Aichi, it is best understood against the mill's own ladder rather than against Takefu's:
- AUS-8 (~0.75% C, ~13-14.5% Cr, no cobalt, 58-60 HRC): the forgiving teacher. Tough, affordable, quick to sharpen, quicker to dull. Our Classic runs it, and we document exactly why.

- ZA-18 (~1.0-1.2% C, ~17-18% Cr, ~1.8% Co, 60-62 HRC typical): the premium sibling. It steps beyond AUS-10 by adding cobalt and pushing chromium well past anything in the AUS series.
One naming clarification, since listings blur it: ZA-18 is commonly described as Aichi's premium grade above the AUS series, but it is not marketed as an AUS steel and does not carry the AUS prefix. Think of it as the AUS family's upmarket relative rather than a member. And the standing reminder from our steel pages applies here too: Aichi's grades and Takefu's V Gold grades are unrelated products from two different mills that happen to compete in the same kitchens.
Hardness and heat treatment
Aichi publishes no cutlery heat-treatment guidance for ZA-18, so as with most Japanese steels the numbers that exist are per-knife listings:
- Most ZA-18 kitchen knives are listed at 60-62 HRC. Sakai Takayuki's Ginga line is commonly listed at 60-61, Tsunehisa's ZA-18 Damascus at 61-62.
- Some listings state up to 63 HRC, at the optimistic end of the spread. Across everything we reviewed, roughly 60-62 is the typical production window, essentially the VG-10 window.
- Cladding does part of the work. Nearly every ZA-18 blade on the market is a laminated construction, a hard ZA-18 core protected by softer stainless layers, which is how these knives keep workable toughness at 61+ HRC.
As always, the listed number is a maker's heat-treatment choice, not a property of the alloy alone. The same billet becomes a different knife in different hands.
Who uses ZA-18
We name only uses we verified through maker or consistent retail documentation. The verified list is longer than the steel's fame suggests:
- Sakai Takayuki, Ginga (銀河, Galaxy) line. The best-known ZA-18 knives: a 69-layer Damascus series over a ZA-18 core from the big Sakai wholesale house, listed around 60-61 HRC and widely documented by Japanese and Western specialty retailers.
- Tsunehisa (Tosa, Kochi). The prolific OEM-oriented maker's ZA-18 Damascus gyuto, santoku, and nakiri, typically listed at 61-62 HRC with stainless Damascus cladding, are among the most affordable documented routes into the steel.
- Kanetsugu, Pro J series (Seki). An early and clearly documented adopter: ZA-18 cutting core with softer stainless cladding, sold with the composition figures this page cites.
- Smaller and private-label lines. ZA-18 Damascus blades also circulate through Japanese OEM channels under various house brands, which is typical for Aichi steel and part of why the grade stays invisible.
Names we could not verify, we left out. Several brands are anecdotally associated with ZA-18 in forum discussion, including some Hatsukokoro lines, but we found no maker or retailer documentation clean enough to print, so we do not.
Why ZA-18 is not famous
If the chemistry is VG-10-plus, why does one steel headline knife blocks worldwide while the other lives in spec-sheet fine print? What follows is our analysis, reasoned from documented history rather than from any Aichi statement, and labeled as analysis:
- VG-10 got the head start and the flagship brands. Takefu's steel rode the 1990s stainless wave into lines like Shun and Tojiro's flagship series, and three decades of co-marketing made the steel name itself a selling point. ZA-18 entered public awareness much later, with no equivalent flagship attached.
- Aichi does not market steel names to consumers. It is an industrial supplier inside the Toyota group; cutlery is a small division, and the mill publishes no enthusiast-facing material for ZA-18 at all. Takefu, by contrast, is a specialty mill whose brand is its steels.
- ZA-18 lives in OEM channels. Most of it ships inside private-label and wholesale-house Damascus lines, where the brand on the blade matters and the core steel is a spec line. Steels become famous when makers put them on the box.
- No signature story. VG-10 has the cobalt-stainless origin story; SG2 has powder metallurgy; ZA-18's story is "like VG-10, slightly different," which is true, useful, and completely unquotable.
The practical consequence cuts in the buyer's favor: because the name carries no premium, ZA-18 knives are often priced below comparable VG-10 knives while giving up nothing documented in performance. Obscurity, in this case, is a discount.

Reading the table honestly: three steels in one performance neighborhood. VG-10 brings the proven record, AUS-10 the value, and ZA-18 the chromium and the quiet price advantage of an unfamous name.
Ownership and care
Because ZA-18 lives in the VG-10 performance class, ownership advice is mercifully boring, and we mean that as a compliment:
- Expect VG-10-like daily behavior. A fine, stable edge that holds through serious prep, touch-ups every few weeks in home use, no patina, no drama. Owner feedback on the Takayuki and Tsunehisa lines is consistent with this; treat it as reported experience, not lab data.
- It is stain-resistant, not stain-proof. The high chromium buys real forgiveness, and ZA-18's documentation leans hard on rust resistance, but the rules stand: hand wash, dry promptly, no soaking, no dishwasher.
- Standard waterstones handle it. A 1000-grit stone plus a 3000-6000 finisher covers everything. Reports describe sharpening feel comparable to VG-10: not fast like AUS-8, not stubborn like heavily carbided powder steels. Deburr patiently, as with VG-10.
- Angles: 12-15 degrees per side suits the hardness class. Hone with a ceramic rod or fine stone, never a grooved steel.
- Board discipline as always: wood or soft plastic, no twisting, no bones, no frozen food. Laminated construction protects the core, not the apex.

Normal discipline still applies: hand wash, dry promptly, wooden or soft plastic boards, no twisting or bones.
