Japanese Swords: A Complete Guide

The same fire that shaped the blade shaped the kitchen knife

Okami is a kitchen-knife house. This section exists because the Japanese kitchen knife and the Japanese sword (nihonto, 日本刀) grew from the same forging tradition: the same charcoal fire, the same lamination of hard and soft steels, the same water quench, the same finishing on natural stones. When the sword lost its place in daily life, the smiths who had made swords turned those exact skills toward the blades a cook uses every day.

We cover swords here as craft and history, not as merchandise. We do not sell swords and never have. We sell kitchen knives. But you cannot honestly explain why a Japanese knife cuts the way it does without explaining where that knowledge came from. That is the story of this guide.

WHY THIS MATTERS TO A KNIFE MAKER

One Lineage of Steel

Traditional Japanese sword steel, tamahagane, was smelted from iron sand in a clay furnace called a tatara. The lamination of a hard cutting steel over a softer, tougher body is a sword-forging idea that lives on in laminated (san-mai) and clad kitchen knives today.

The Same Hands

After the 1876 Haitorei edict removed the right to carry swords, the market for Japan's most skilled bladesmiths largely disappeared. Many redirected the same craft toward kitchen knives, farm tools, and cutlery, seeding the regional knife industries we cover elsewhere on this site.

Craft, Not Commerce

Understanding sori (curvature), hamon (the temper line), and hada (the grain) is understanding the choices a smith makes at the forge. Those same choices, scaled to the cutting board, are why a good gyuto feels the way it does in your hand.

THE BLADE AT A GLANCE

A Japanese sword is not one thing. The word covers a family of blades that changed shape as war and society changed. The tachi came first among the classic curved forms, a longer blade worn edge-down and slung from the belt, favored by mounted warriors. Later the katana was worn edge-up through the sash, quicker to draw on foot. The shorter wakizashi was a companion blade, and the tanto was a dagger. Reference sources typically place the katana above roughly 60 cm of blade, the wakizashi between roughly 30 and 60 cm, and the tanto below roughly 30 cm, though period and school affect where those lines fall.

What unites them is method. Each was forged from tamahagane, shaped with a curve (sori), and hardened so that the edge became glass-hard while the spine stayed springy. That differential hardening leaves a visible frontier along the blade, the hamon, and it is the same principle that lets a good kitchen knife hold a keen edge without snapping. Sword history is old, and parts of it are genuinely contested among scholars. Where reputable references agree, we state things plainly. Where they disagree, or where a popular claim is not well supported, we say so rather than pick a dramatic version. We do not invent smith names, dates, or provenance. When a figure is approximate, we mark it as approximate.

THE SWORD THROUGH TIME

Sword scholars often sort blades into broad eras rather than by exact year. The boundaries below are the conventional ones, but reputable references disagree on the precise dates, partly because Japanese era names do not line up cleanly with the Western calendar. Treat these as orientation, not gospel.

Koto

古刀 · old swords

The long early era, roughly from the mid-Heian period to about 1596. The curved blade we now think of as the Japanese sword took shape in the Heian period. Many of the most celebrated works date from here.

Shinto

新刀 · new swords

Roughly 1596 into the later 1700s. A more peaceful, urban Japan changed how and where swords were made, and steel supply and taste shifted with it.

Shinshinto

新々刀 · new-new swords

Roughly the late 1700s to the Meiji era. A conscious revival, with smiths deliberately looking back to admired koto work.

Gendaito

現代刀 · modern swords

Modern blades. References split on the exact start, some from the 1868 Meiji Restoration and some from the 1876 sword edict. This is the era in which so much sword-forging skill was redirected toward the kitchen knife.

HOW TO READ A BLADE

Four features do most of the work when someone describes a Japanese blade. You will meet each in depth on the pages above; here is the short version so the vocabulary is familiar.

Sori · the curve

The blade's curvature, and specifically where the deepest point of the curve sits. Torii-zori centers the curve, koshi-zori sets it toward the hand, saki-zori toward the tip. Much of the curve forms in the quench, not by bending.

Hamon · the temper line

The wavering line above the edge, left by differential hardening. It can run straight (suguha) or in patterns such as notare, gunome, or choji. It is functional first: hard edge, tougher body.

Hada · the grain

The pattern left in the steel by repeated folding and forge-welding, revealed by polish. Named types include itame (plank), mokume (burl), and masame (straight). The same folded-steel logic underlies laminated knives.

Nakago · the tang

The hidden tang inside the handle, left unpolished and carrying any signature. Because it is rarely reworked, it is often the first thing an experienced eye examines when judging age and authorship.

Does Okami sell Japanese swords?

No. Okami is a kitchen-knife house and we do not sell swords of any kind. This section is educational: it explains the forging tradition that our kitchen knives descend from. When you are ready to buy, everything we offer is a kitchen knife.

What is the difference between a katana and a tachi?

Both are long curved swords, but they differ in how they were worn and, often, in curvature. A tachi was worn edge-down suspended from the belt and is associated with earlier, mounted use. A katana was worn edge-up through the sash for a faster draw on foot. Many blades were even reworked from one form to the other over the centuries.

What is tamahagane?

Tamahagane, meaning roughly jewel steel, is the traditional steel used for Japanese swords. It is smelted from iron sand and charcoal in a clay furnace called a tatara. Only a fraction of each smelt yields steel of the quality a swordsmith wants, which is part of why the material is so prized. Our dedicated tamahagane page covers it in detail.

How is a sword connected to a kitchen knife?

Through craft and through people. Sword forging uses lamination of hard and soft steel, water quenching, and hand-finishing on stones, and those same methods underlie traditional Japanese knives. After swords lost their everyday role in the late 1800s, many smiths applied the identical skills to kitchen blades, which is why several of Japan's knife regions began as sword-making centers.

What does the NBTHK do?
