One country, one obsession with the edge, on nearly every tool it makes
Japan did not put a world-class edge only on the sword and the kitchen knife. It put one on the barber's razor, the woodworker's marking knife, the gardener's shears, the bonsai artist's trimmers, the pocket knife, and the whetstones that sharpen all of them. The same instincts that produced the katana, hard steel laminated to soft, patient hand finishing, a respect for the specific job a tool has to do, run straight through the whole toolbox. This atlas maps that territory.

We cover the rest of Japan's blades here as craft and history, because you cannot really understand why a Japanese knife cuts the way it does without seeing the tradition it belongs to. ONE TRADITION, MANY TOOLS
Lamination Everywhere
Hard, high-carbon cutting steel forge-welded to a softer, tougher body is not a knife idea or a sword idea. It is a Japanese blade idea. You find it in the kamisori razor, the kiridashi marking knife, the plane iron, and the single-bevel kitchen knife alike: put hardness where it cuts, keep toughness behind it.
Regions, Not Just Brands
Sakai, Seki, Tsubame-Sanjo, Echizen: Japan's edge tools come from cutlery regions with centuries of specialized labor, several of which began as sword-making centers before turning to knives, tools, and razors. The place is part of the object.
Finished on Stone
The final edge on a razor, a chisel, or a fine knife is set on Japanese natural whetstones, the same family of finishing stones a sword polisher would recognize. Sharpening is not an afterthought in this tradition; it is where the tool is actually completed.

The Territory
How the Blades Fit Together
It is tempting to think of the katana as the origin and everything else as a descendant, but the honest picture is a web, not a family tree with one root. Japan has smelted iron and forged edges for well over a thousand years, and different tools matured at different times for different reasons. What they share is not a single ancestor but a set of habits: lamination of hard and soft metal, water quenching, single-bevel geometry where the job allows it, and a final edge set by hand on natural stone. Those habits are the through line of this atlas.
Start with the grooming blades. The kamisori, the traditional straight razor, is a single forged piece with an asymmetric grind, historically made from a hard cutting steel laminated to soft iron and, in its most celebrated form, from tamahagane before makers moved to imported Swedish carbon steel. Japanese barber and hairdressing scissors belong to the same grooming world and to the same cutlery regions, particularly Seki and Sakai, where the precision needed for two blades to shear cleanly against each other is its own discipline.
Move to the craft and pocket blades. The kiridashi is the woodworker's marking and utility knife, a single-bevel blade whose one flat face lets it scribe a line dead against a straightedge, and it shares its geometry directly with single-bevel kitchen knives. The folding pocket knives of Japan, including the well-known higonokami friction folder, carry the same steel tradition into an everyday carry format, simpler than a Western lockback but made with the same attention to the edge.
Then the garden and outdoor blades. Bonsai has its own specialized cutters, including the concave cutter designed to leave a wound that heals flush, alongside the pruning shears used in the niwaki style of garden trimming and the hori-hori digging tool. Further afield, the nata is a heavy field knife or light hatchet used in forestry and the outdoors, and the kama is the sickle of the rice field, both of them working tools where toughness matters as much as a keen edge. These are the blades that shaped the landscape rather than the plate.
Underneath all of them sit the whetstones. Japanese natural finishing stones are not an accessory to this tradition; they are the last station of it. A razor, a chisel, and a fine gyuto are all brought to their working edge on the same kind of fine natural stone, and the grading of those stones is a craft in itself. That is why we give them their own page rather than treating sharpening as a footnote.
And then the two anchors. The kitchen knife is what we make and sell, and it is the living heart of this whole tradition, the tool most people will ever actually hold. The sword is where much of the metallurgy and many of the smiths came from, and where the story of laminated hard-and-soft steel is told most dramatically. Everything else in this atlas sits somewhere between those two poles, sharing steel, sharing regions, sharing stones.
The Regions
Where Japan's Edges Are Made
You cannot separate a Japanese blade from the town that made it. A handful of cutlery regions account for most of the tools in this atlas, and several of them began as centers of sword production before the trade shifted. Seki, in Gifu Prefecture, has forged blades for centuries and is today a world capital of cutlery and, notably for this page, the home of Feather, the razor and blade company whose modern kamisori-style shavette appears in our razor coverage. Tsubame-Sanjo, in Niigata, is a dense metalworking district, and the Sanjo side of it is the home of the Iwasaki kamisori lineage as well as a broad range of hand tools.
Other regions carry the kitchen-knife tradition we build on directly, and we cover them in depth on their own pages. The point of naming them here is simply that this atlas is not a catalog of abstract blade types; it is a map of real places, real workshops, and in many cases named makers whose work you can still trace. Where we can verify a maker and a region, we name them. Where we cannot, we leave the space honestly empty rather than filling it with a guess.

About This Atlas
Does Okami sell all of these blades?
No. Okami is a kitchen-knife house and we sell kitchen knives only. We do not sell razors, tools, scissors, or swords. This atlas is educational: it maps the wider tradition of Japanese edge tools so that our kitchen knives can be understood in context.
What do all these Japanese blades have in common?
A shared set of methods rather than a single origin: lamination of hard cutting steel to a softer, tougher body, water quenching, single-bevel geometry where the task allows it, and a final edge set by hand on natural stone. Those habits run from the razor to the garden shear to the kitchen knife.
Are Japanese swords the origin of all the other blades?
Not exactly. The relationship is a web, not a single family tree. The sword is where much of the lamination and heat-treatment knowledge was developed and where many skilled smiths came from, and after swords lost their everyday role, many smiths turned to knives and tools. But several blade families matured on their own timelines for their own uses.
Where are these blades made?
Mostly in a handful of Japanese cutlery regions, several of which began as sword-making centers. Seki in Gifu and Tsubame-Sanjo in Niigata are two that recur across this atlas, the former home to the Feather blade company and the latter to the Iwasaki kamisori lineage.
