Why Your Knife Will Not Get Sharp

You put in the strokes and it still will not bite paper. The problem is almost never the knife. This is a diagnosis: find which of seven common mistakes is stopping your edge, and fix that one thing.

Ninety percent of "it will not get sharp" comes down to two things: you never raised a burr, or you never removed it cleanly.

Sharpening is just grinding two bevels until they meet at a clean apex, confirming you got there by feeling a burr, then removing that burr without rounding the edge. 01 · The Model

What "sharp" actually is

An edge is where two bevels meet. When they meet at a clean line with no flat or rounded metal between them, the knife is sharp. Everything that goes wrong is a failure to reach that line, or a failure to leave it clean.

The single most important feedback in sharpening is the burr (also called a wire edge): a tiny lip of metal that folds to the far side of the edge once one bevel has been ground all the way to the apex. You feel for it by dragging a fingertip gently off the edge (never along it), spine toward edge. No burr means you have not reached the apex, full stop. Raise a burr along the whole length on one side, flip and raise it on the other, then remove it. That is the entire game.

The honest reframe

A knife that "will not get sharp" is nearly always a technique diagnosis, not a steel or stone problem. Good news: technique is free to fix. Work the causes below in order.

The seven reasons, and the fix for each

Start at the top. The first two causes account for the large majority of failures, so confirm them before blaming your gear.

1. You are not raising a burr (not reaching the apex)

The number one cause. If you never feel a burr, your strokes are polishing the shoulder of the bevel but never quite reaching the very edge. Fix it by committing to one side: grind until you feel a continuous burr along the entire length, heel to tip, before you flip. Do not alternate sides until each side has fully burred. On a very dull knife this takes many more coarse-stone strokes than you expect.

2. The wire edge is not deburred

You raised a burr on both sides, so the edge is apexed, but that fragile lip of metal is still hanging on. It feels sharp for one cut, then folds and goes dull instantly. Remove it with a few very light, edge-leading passes on your finishing stone, alternating sides with steadily lighter pressure, and finish by stropping (on the stone, leather, or even cardboard). Thin and break the burr off cleanly, do not grind a new one.

3. Inconsistent angle, rounding the edge

If your wrist rises and falls through the stroke, you grind a curved, convex shoulder instead of a crisp bevel, and the apex never forms. Pick an angle and hold it: roughly 12 to 15 degrees per side for Japanese double-bevel knives, higher for Western, as covered in the angles guide. Consistency matters more than the exact number, and an angle guide clipped to the spine removes the variable entirely.

4. Glazed or dished stone

Stones wear. A stone gone smooth and shiny (glazed) or hollow in the middle (dished) stops cutting and stops forming slurry, so you grind with nothing happening. Flatten it with a flattening plate or coarse wet-dry paper on glass until the surface is fresh and even, and keep it flat as normal maintenance.

5. You started too fine

A fine stone refines an edge, it does not create one. Start on a 3000 or 6000 grit stone with a dull knife and you can polish for an hour and never apex. Set the edge on a coarse-to-medium stone first (around 400 to 1000), confirm a burr, then climb through the grits. When in doubt, go coarser to start.

6. A chip or damage that needs regrinding first

A visible chip or a bright reflective flat along the edge will not yield to fine sharpening: the low point of the chip sits below the edge line, so you are sharpening around a gap. You must grind the whole edge down on a coarse stone until you reach the bottom of the chip, resetting the edge, then re-sharpen normally. This is slow and removes real metal, so for a deep chip weigh it against a professional regrind.

7. Very hard or wear-resistant steel

Good technique with a stubborn edge can mean the steel outclasses your abrasive. High-hardness or high-vanadium steels resist ordinary stones, which then burnish rather than cut. 03 · Confirm

How to test that you fixed it

Do not trust your thumb across the edge, which is unreliable and unsafe. Use consistent tests before and after:

  • Paper: hold a sheet of printer paper by one edge and slice down through it. A sharp knife glides and cuts cleanly; a dull one tears, snags, or slips.
  • Burr check: during sharpening, the presence of a burr is your proof you reached the apex. Its clean absence after deburring is your proof the edge is finished.
  • Light test: hold the edge up to a light. A truly sharp edge reflects no light along its length. Bright spots are flats or a remaining chip, telling you exactly where to keep working.
When it is genuinely pro-territory

A deep chip, a badly rounded or "recurved" edge from years of bad sharpening, or a knife that needs full re-profiling is a lot of careful coarse grinding, and it is easy to overheat a thin edge or take it out of true. Sharpening questions

Why does my knife get duller after I sharpen it?

You almost certainly left a wire edge on. A burr that is not removed feels sharp for one cut, then folds over and the edge collapses. Deburr with light alternating edge-leading strokes and a strop.

How do I know if I raised a burr?

Gently drag a fingertip off the edge, moving from spine toward the edge (never sideways along it). A tiny catching lip on the opposite side from the one you sharpened is the burr. No burr means you have not reached the apex yet.

My stone does not seem to cut anymore. Why?

It is probably glazed or dished. Flatten it with a flattening plate or coarse wet-dry paper on glass to expose fresh abrasive, and keep it flat as routine maintenance.

Why can I not sharpen my very hard Japanese knife?

Hard, wear-resistant steels can outmatch ordinary stones, which burnish instead of cutting. Move to diamond or quality ceramic abrasives, which cut high-hardness steel where softer stones stall.

Do I need an expensive high-grit stone to get sharp?

No. Sharpness is created on the coarse and medium stones by apexing and deburring. Fine stones only refine an already-sharp edge. A single medium stone, used correctly, will outperform a fine stone used wrong.

When should I stop and take the knife to a professional?

When there is a deep chip, a heavily rounded or recurved edge, or a need to re-profile the whole blade. That is a lot of coarse grinding with real risk of overheating a thin edge, and a pro will do it faster and truer.
