How to Thin a Japanese Knife
After years of sharpening, a great knife can start to feel like it is wedging through food instead of gliding. That is thickness behind the edge, and thinning is how you fix it. Here is the honest version, including where it stops being a home job.

Why knives get thick and wedgy

How to thin on a coarse stone
Thinning removes a lot of steel, so it happens on a coarse stone (roughly 200 to 600 grit) and then gets refined upward. Make sure the stone is dead flat first; thinning on a dished stone grinds an uneven hollow into your blade.
- Soak and set up. Prepare your coarse stone as usual and set it on a stable, non-slip base. You will be pushing hard for a while.
- Lay the blade almost flat. Instead of the steep angle you use for the edge, drop the blade down close to the stone so the flats behind the edge make contact. On a double-bevel knife you work both sides; on a single-bevel you work the flat front and tend the back only lightly.
- Grind the shoulder, not the apex. Work the blade road with even, full-length strokes, section by section from heel to tip, keeping consistent pressure. You are abrading the flats, gradually lowering the shoulder so it blends smoothly toward the edge.
- Check constantly. Feel for a burr forming on the opposite side; that tells you the flat is now meeting the edge. Move along the blade so you thin evenly rather than digging a low spot.
- Refine and re-sharpen. Once the geometry is right, work up through your grits to remove the coarse scratches, then put a fresh edge on as normal. Thinning always ends with a full sharpening.
The sharpie method: see exactly what you are doing
This is the single most useful trick in thinning, and it is nearly foolproof. Color the area you want to thin with a permanent marker (a sharpie), covering the bevel and the flats behind the edge. Then take one or two strokes on the stone and look.
- The stone removes ink only where steel actually touched it, so the shiny scratched zones show your real contact and the remaining ink shows where you are missing.
- If ink survives right at the edge, your angle is too high and you are only hitting the shoulder. If ink survives up the blade road, you are too low. Adjust and re-check.
- Re-inking every so often lets you confirm you are lowering the shoulder evenly from heel to tip instead of grinding a dip.
The marker turns an invisible process into a visible one. For a first attempt, ink up and take single strokes until the contact pattern is exactly where you want it before you commit to real grinding.
Difficulty, risk, and when to call a pro
Thinning is not hard to do. It is hard to do well, and mistakes are permanent. The realistic risks: you thin unevenly and leave low spots, you round over or scratch a nice finish, you change the grind so the knife no longer sits right, or you simply remove more steel than the blade can spare. None of it grows back.
Light maintenance thinning on a cheap stainless gyuto is a fine place to learn. Major thinning on a good knife is not. Send it out if the knife is expensive or hand-forged, if it is a single-bevel deba, yanagiba, or usuba (where the flat back geometry is unforgiving and easy to ruin), if it has a finish you cannot replicate (kasumi, mirror, kurouchi, damascus), or if it needs heavy correction rather than a light touch-up.
