How to Fix a Chipped Japanese Knife
A chip is not the end of a knife. Most are grindable at home on a whetstone with patience. But some run deeper than they look, and forcing a fix on a good blade is how a small problem becomes a ruined one. Here is how to tell the difference, and how to do it right.
Grind the edge back until the chip disappears, then rebuild the bevel through the grits. Small chips are a fifteen-minute job. Deep ones cost real blade height, and past a point they are a professional's call.
A chip is a missing piece of the very edge. You fix it by lowering the whole edge line, on a coarse stone, until it is level with the bottom of the chip, then re-establishing the bevel and refining up through your finishing stone. A shallow chip you can barely see costs a minute and almost no steel. A chip a millimeter or more deep means removing that much blade height across a wide span, which is slow, changes how the knife looks, and on a hard or expensive blade is a job worth handing to a professional sharpener. What causes a chipped edge
Japanese knives are hard. That hardness is exactly what lets them take and hold a screaming edge, and it is also why they chip where a softer Western knife would simply roll or dent. A thin, hard edge has very little material to give, so when it meets something it cannot cut, a tiny piece breaks away instead of bending.
The usual culprits are all avoidable:
- Hard contact surfaces. Glass, stone, ceramic, and metal boards are the number one cause. The edge loses every time it strikes something harder than it is.
- Hard foods. Bones, frozen items, winter squash skin, and stone fruit pits ask more of a thin edge than it can safely give.
- Lateral force. Twisting or prying with the tip or edge, scraping food off the board with the cutting edge instead of the spine, or levering through a hard vegetable.
- Careless storage. Loose in a drawer where the edge knocks against other tools, or dropped into a sink onto a plate.

How bad is it, really
Before you touch a stone, look at the chip in good light, ideally with the edge held up toward a window. What you are measuring is depth: how far the chip reaches up from the edge into the body of the blade. That depth is what you will have to grind away across a section of the edge, because the whole edge line has to come down to meet the bottom of the chip.

A useful rule: if you can grind the chip out and still have a knife that looks and cuts like itself, do it at home. If removing the chip would visibly change the blade's profile, thin it dramatically, or eat into the shinogi line on a single bevel, stop and get a second opinion.
Grinding out a chip, step by step
You need a coarse stone to do this efficiently. A 1000-grit stone will get there eventually, but for anything past micro-chipping a coarse stone in the 120 to 400 range removes steel far faster and saves the fine stone from heavy wear. After the coarse work you rebuild the edge exactly as in a normal sharpening.
- Soak and set up. Saturate the stone until bubbles stop rising, and set it on a damp towel so it cannot slide. A wobbling stone ruins your angle.
- Lower the edge, flat. Here is the key move. Instead of holding your normal 12 to 15 degree bevel angle, lay the blade almost flat, or hold it at a low angle, and grind the edge straight down. You are deliberately blunting the edge to bring the whole edge line even with the bottom of the chip. Check progress often against the light.
- Grind until the chip is gone. Work the affected section and blend it into the rest of the edge so you do not create a scallop. The edge will now be a flat, dull line with no chip in it. This is correct. You have not wrecked the knife; you have reset it.
- Re-establish the bevel. Now raise the blade back to your normal sharpening angle, 12 to 15 degrees per side for most Japanese knives, and sharpen on the coarse or medium stone as usual until you raise a burr along the full length. - Refine up through the grits. Move to your 1000 stone, then a 3000 or finishing stone, raising and removing the burr on each, exactly as in the whetstone guide. The coarse grind leaves a rough edge; the fine stones make it keen again.
- Deburr and test. Alternate light strokes to shed the final burr, strop a few passes edge-trailing, rinse, dry, and test on paper. It should part cleanly with no snag where the chip was.
Every chip repair makes the knife shorter in height, not length. You are removing edge to reach the bottom of the damage, so the blade gets a little narrower from edge to spine. One shallow chip is invisible. Repeated deep repairs over years will slowly change the knife's profile and eventually thicken the edge as it approaches the wider part of the blade, at which point the knife needs thinning behind the edge. That is normal for a well-used knife, but it is why grinding out a deep chip is a real decision, not a free fix.
When to stop and see a professional
We would rather you keep a good knife than prove a point on a stone. Hand it to a professional sharpener when any of these is true:
- The chip is deep and the knife is expensive. On a blade worth a few hundred dollars, the cost of professional work is small next to the risk of grinding a lopsided edge or overheating the steel.
- Damage reaches past the edge bevel into the primary grind, or you see a hairline crack running up from the chip. A crack can propagate; that is not a sharpening job.
- It is a single-bevel knife such as a yanagiba, usuba, or deba. Correcting a chip without wrecking the flat back and the shinogi line takes real skill.
- Removing the chip would change the profile you rely on, for example flattening the curve of a gyuto tip.
- You do not have a coarse stone and would be grinding for an hour on a 1000. That much heat and wear invites more mistakes than it fixes.
A professional has coarse grinding equipment, water cooling to protect the temper, and the experience to keep the geometry honest. There is no shame in it. The shame is in destroying a knife you love to save a modest fee.
Stopping it from happening again
Chip repair is grinding away good steel, so the best repair is the one you never have to do. The habits are simple and they are the same ones that keep any Japanese knife healthy:
- Cut only on wood or soft plastic. Never glass, stone, ceramic, or metal. This single change prevents most chips.
- Keep hard foods off the thin knives. Use a heavier or Western knife for bones and frozen items, and never force the blade through a squash or a pit.
- Push and pull, do not twist. Let the edge slice; scrape food with the spine, not the edge.
- Store the edge protected. A saya, a magnetic strip, an in-drawer tray, or a guard. Loose in a drawer is where edges go to die.

Chipped knife questions
Can I fix a chipped knife myself?
Usually, yes. Small and moderate chips grind out on a coarse whetstone in under an hour: you lower the edge line to the bottom of the chip, rebuild the bevel, and refine up through the grits. Deep chips, cracks, single-bevel knives, and expensive blades are better handed to a professional.
What grit stone do I need to fix a chip?
A coarse stone, roughly 120 to 400 grit, does the heavy metal removal. You then move to a 1000 stone and a 3000 or finishing stone to rebuild and polish the edge. A 1000 stone alone can work for tiny chips but is painfully slow on anything larger.
Does fixing a chip ruin the knife?
No, but it costs blade height. You remove edge to reach the bottom of the chip, so the blade gets slightly narrower from edge to spine. One repair is invisible. Many deep repairs over the years slowly change the profile, which is normal wear on a working knife.
How deep is too deep to fix at home?
As a guide, chips beyond about 1 mm, damage that reaches past the edge bevel, or any hairline crack are the point to consider professional help, especially on a hard or costly knife. The deeper the chip, the more steel you remove and the easier it is to grind an uneven edge.
Why do Japanese knives chip so easily?
Because they are hard. Hardness lets the edge get very thin and stay sharp, but a thin hard edge breaks a small piece away instead of bending when it meets something it cannot cut. It is the trade-off for the sharpness, and good habits prevent nearly all of it.
Can a honing rod fix a chip?
No. A honing rod only realigns an edge that has rolled slightly. A chip is missing metal, which only sharpening can restore. Use a ceramic rod for maintenance, a whetstone for repair.
A chip is a setback, not a death sentence.
