A honyaki gyuto from a respected Sakai workshop will cost you somewhere between $1,200 and $4,000. A kasumi gyuto from the same town, in the same steel, by the same maker, will cost between $200 and $500. Same town. Same smith, sometimes. Same family of steels. The factor of ten in price comes down to how the blade is built.

Most buyers never learn the difference. The product page says "hand-forged in Japan" and people stop reading. But the construction method dictates almost everything that matters about the knife: how it sharpens, how it ages, how it breaks, and whether it is the right tool for what you actually do in your kitchen. So let us actually get into it.

The two methods, in plain English

Japanese knives are built one of two ways. The blade is either monosteel (one piece of high-carbon steel, hardened end-to-end) or it is composite (a hard core wrapped in softer iron or steel). Honyaki is the first. Kasumi is the second. Almost every other category of Japanese knife is some variation of one or the other.

Honyaki, written 本焼, means "true forged." It is the same construction that a Japanese sword smith uses for a katana. A single billet of high-carbon steel is heated, hammered, and selectively quenched so that the edge is hard while the spine retains some flex. There is no wrapping, no cladding, no welding of layers. The whole knife is one piece of steel, and that steel is at full hardness only along the cutting edge.

Kasumi, written 霞, means "mist," named for the cloudy line that appears where the soft cladding meets the hard core after polishing. A small piece of high-carbon steel forms the cutting edge. Around it, the smith hammers a thicker layer of soft iron or low-carbon steel. The whole assembly is forge-welded together, drawn out, and ground to shape. The hard part of the knife is just the edge. Everything above the cutting bevel is soft.

Why the layering matters

Soft cladding does three useful things. It absorbs shock, so a thin hard core does not chip every time you tap the spine. It makes the knife easier to sharpen, because you are only ever working a small amount of hard steel. And it makes the knife cheaper to produce, because you only need a small amount of premium steel for the edge.

That last one is why kasumi exists in the first place. Shirogami (white paper steel) and Aogami (blue paper steel) are not cheap. Wrapping a sliver of either in workhorse iron lets a smith make a working knife at a working price.

Why honyaki costs what it costs

The premium on a honyaki blade is not marketing. It is failure rate. Selectively hardening a single piece of high-carbon steel without warping it, cracking it, or ending up with the wrong hardness gradient is genuinely difficult. Even master smiths in Sakai lose blades during the quench. The ones that survive are graded, and the surviving graded ones command the price you see on import sites.

The technique is called yaki-ire. The smith coats the spine and most of the body of the blade in a clay slurry, leaving only the edge exposed. Then the whole thing is heated to critical temperature and dropped into water. The exposed edge cools fast and forms hard martensite. The clay-coated spine cools slowly and stays softer pearlite. If the clay layer is wrong, the blade warps. If the temperature is off, the edge cracks. If the steel composition has any inclusions, you get a stress fracture two months later in someone else kitchen.

The reward, for the few that come out clean, is a knife that takes and holds an edge unlike anything else. There is no soft cladding to mush around the edge under heavy work. The steel is uniform and clean. A well-made shirogami honyaki yanagiba is, to a sushi chef who can sharpen it, the closest thing to a perfect cutting tool that exists.

What kasumi gives up, and what it does not

Here is the part most articles get wrong. Kasumi is not a downgrade. It is a different design choice. A working kasumi blade in good shirogami will outcut a mediocre honyaki any day of the week, because the steel that matters (the edge) is the same. What you give up with kasumi is mostly aesthetic and mostly long-term.

The aesthetic loss is the misty hada line where the cladding meets the core. Some buyers love it. Some find it busy. Honyaki is monolithic and clean. Kasumi reads as more obviously hand-made.

The long-term loss is sharpening geometry over years. A honyaki blade can be ground thinner and thinner across its life because the entire blade is hard. A kasumi blade has a finite amount of hard steel in the core, and aggressive thinning eventually exposes the soft cladding closer to the edge than you want. For a chef who sharpens daily for forty years, this matters. For a home cook who hones once a week and gets the knife professionally sharpened twice a year, it does not.

The single-bevel question

Both honyaki and kasumi can be made as single-bevel knives (yanagiba, deba, usuba) or double-bevel (gyuto, santoku, bunka). The construction method is independent of the bevel geometry. A honyaki gyuto exists. A kasumi yanagiba is the standard format for sushi work.

If you are buying a single-bevel knife for traditional Japanese cuisine, the construction question becomes more consequential. Single-bevel knives need to be precisely thinned and tuned over their life. Many chefs eventually want a honyaki for their primary single-bevel because the geometry holds up across a forty-year career. For double-bevel work knives, the case for honyaki is much weaker.

The price tiers, honestly

Here is the rough map of where each format lives in the market right now.

  • $80 to $200: Mostly machine-ground kasumi or San-Mai (three-layer) blades. Good steel cores, reasonable cladding, finished by hand at the edge. This is where most home buyers land.
  • $200 to $500: Hand-forged kasumi from named smiths. Better steel selection, better cladding integration, more careful heat treatment.
  • $500 to $1,500: Top-tier kasumi from famous workshops, plus the occasional entry-level honyaki from a younger smith.
  • $1,500 and up: Honyaki from established smiths. Expect to wait. Many require a year or more from order.

The honest answer for a home cook reading this: you do not need a honyaki. You probably do not even need a $500 kasumi. A well-made workhorse blade, properly cared for, will outperform almost any high-end knife in a kitchen where it gets used three times a week and sharpened twice a year.

What we make, and why

Both Okami knives are double-bevel kasumi-style construction. The Classic uses AUS-8 mono-steel with a polished finish. The Premium is a 67-layer Damascus over an AUS-10 core, which is a kasumi variant where the cladding itself is patterned. We do not make honyaki, and frankly, neither do most of the brands selling at our price point. If anyone is selling you a $300 honyaki gyuto, I would ask hard questions about what "honyaki" means in their marketing department.

If you want a real honyaki, buy from a named Sakai smith through a reputable Japanese retailer, expect to pay four figures, and budget for a year of practice with a soft kasumi first so you do not chip your investment piece on a frozen scallion.

The decision tree

Buying for a home kitchen, cutting mostly produce and the occasional protein? A good kasumi gyuto in the $150 to $300 range is the right tool. Buying for a sushi restaurant where you slice fish for six hours a day? A kasumi yanagiba to learn on, then a honyaki yanagiba once you can sharpen it without ruining it. Buying because you saw a YouTube video about Sakai smiths and want a piece of the tradition? Save up, buy honyaki, and treat it accordingly. Do not put it in the dishwasher.

The patina question for both formats

Both honyaki and kasumi blades, when made from carbon steel, develop patina. The patina behavior is different on each. On honyaki, the patina forms uniformly across the entire blade because the entire blade is the same steel. The result is a single coherent color shift, often deep blue-grey, that gives the knife a monochrome character. On kasumi, the soft cladding and the hard core take patina at different rates and in different colors. The cladding usually goes a duller grey; the core can go a more saturated blue or purple. The result is a two-tone aged blade that visually accentuates the hada line.

Some buyers prefer the monolithic look of honyaki patina. Others prefer the contrast of kasumi patina, which highlights the construction. Neither is correct; both are valid aesthetic preferences. But it is worth knowing that the construction method affects the way the blade ages, not just the way it cuts and the way it sharpens.

Heat treatment, briefly

One last technical note that affects both formats. The heat treatment of the cutting edge is what actually produces the working hardness, and it is independent of whether the construction is honyaki or kasumi. A poorly heat-treated honyaki is worse than a well-heat-treated kasumi. A well-heat-treated kasumi is excellent regardless of price tier.

This is why naming the steel and the maker matters more than naming the construction method. "Hand-forged in Sakai" tells you something. "Honyaki construction" tells you something. But "shirogami #2 by named smith X with documented heat treatment" tells you the most. The construction method is one factor in a multi-factor decision, and over-weighting it is a common buyer mistake.

The construction method is a tool. Match the tool to the job, not to the Instagram aesthetic.
